Job description

Job Summary:

A Head Cook is responsible for preparing and cooking various food items according to recipes and monitors cooks' production acting as a lead.

Main Duties and Responsibilities:
  1. Assembles equipment according to airline specifications following procedures and assembly diagrams.
  2. Packages and prepares alcoholic beverages for airline flights.
  3. Keeps production areas in compliance with sanitation standards and customer requirements.
  4. Documents inventory in compliance with requirements.
  5. Follows directions.
  6. Works as a member of a team.
  7. Supports Hot Food leadership in monitoring team’s production quality and efficiencies.
  8. Performs additional duties as assigned by management.
Qualifications
Education:
  • Culinary degree and/or cook certification preferred.
Work Experience:
  • At least 2 years of experience cooking in a high-volume institutional catering environment preferred.
  • Experience with maintaining temperature logs for all food items prepared.
  • Recipe conversion experience required to accommodate daily production needs.
Technical Skills:
  • Not applicable.
Language / Communication Skills:
  • Ability to read, write, and follow food specifications and menu guidelines.
  • Effective communication with supervisors and co-workers.
Requirements of the Job:
  • Handle various food products such as seafood, beef, pork, poultry, fruits, and vegetables.
  • Properly handle knives and kitchen tools.
  • Work the assigned schedule, which may include weekends and holidays.
  • Work overtime when required.
  • Arrive on time.
  • Complete paperwork and administrative duties.
  • Comply with company policies.
Work Environment:
  • Handle pork, poultry, meat, and fish products.
  • Expose to extreme temperature changes and noise.
  • Lift, push, pull, and move products, equipment, and supplies up to 50 pounds frequently.
  • Stand, bend, lift, and move intermittently during shifts of 8+ hours.
