Position Purpose: The Cook 2 guides, supports, and actively participates in all aspects of production and service of a variety of foods/cuisines, including cutting meat and seafood, making sauces, and/or cooking proteins. During the service phase of the workday, the Cook Lead prepares menu items to customer order and provides direction to the staff involved in assembling foods, plating, grilling, and performing sales transactions.

Duties and Responsibilities:

  1. Review menus and recipes and consult with the Manager on production goals for the day/week.
  2. Develop prep and order specifications derived from multiple recipes at various stations.
  3. Prepare menu items from scratch ingredients.
  4. Ensure the successful and timely execution of the menu, consulting with culinary leadership if exceptions occur.
  5. Assign, instruct, and check the work of all kitchen staff, delegating to cooks and leads as appropriate.
  6. Check inventory levels and ensure the kitchen is properly stocked.
  7. Break down larger cuts of meat and seafood.
  8. Review prepared menu items to ensure proper cooking, presentation, and authentic flavors.
  9. Receive inquiries and orders directly from customers and fulfill as requested.
  10. Monitor prepared foods for compliance with HACCP, including taking and recording food temperatures before the food leaves the production area.
  11. Oversee and participate in cleaning and sanitizing all kitchen areas.
  12. Ensure foods and menu items remaining after meal preparation and service are properly wrapped, dated, labeled, and stored before the shift ends.
  13. Maintain records of foods produced, wasted, and any recipe adjustments.
  14. Identify safety issues or equipment malfunctions and report them to the Unit Manager.
  15. Perform related duties as requested.

Position Dimensions:

Positions are 9-month or 11.5-month cyclic, located at various UW Dining venues. Schedules may change with two weeks' notice.

All employees support overall operations by participating in cross-training, providing coverage during absences or high volume, supporting production or service of special events, and being willing to perform additional duties or reassignments within the job classification.

Minimum Requirements:

Possession of, or eligibility to obtain, a Washington State Food Worker card within two weeks of employment AND one year of experience performing skilled cooking duties; or equivalent education/experience.

Desired Qualifications:

  • Ability to cook foods from scratch using various techniques.
  • Experience with Microsoft Word and Excel.
  • Food production experience within college residential dining.
  • Knowledge of standard cuts of meat including poultry and fish.
  • Experience in cutting and preparing meat and seafood, including sauces, using methods such as slicing, carving, roasting, brining, smoking, curing, marinating, and grilling.
