Job description

Department Overview

A Cook 2 prepares and cooks individual menu items and meals on demand, directly from orders placed by customers using standardized recipes and safe, sanitary procedures in a high-volume dining and food service facility. The Cook 2 is responsible for ensuring all food products and meals are handled safely and at correct temperatures. This position also provides relief leadership to work areas and other cooks as needed by business demands.

Additional duties include maintaining adequate products and supplies, requesting necessary orders, utilizing mise en place in food preparation, checking deliveries for quality and accuracy, assigning and reviewing work, and training staff. Keeps records of food production, service, leftovers, and recipe changes.

Other responsibilities involve preparing simple foods, salads, sandwiches, grilling, chopping vegetables, slicing meats and cheeses, adjusting recipes to reduce waste, preparing beverages and snacks, using commercial kitchen equipment, and ensuring food quality and temperature standards are met.

Function/Duties of Position

Preparation/Cooking:

  • Prepares food according to standardized menus and recipes, gathers ingredients, and uses various cooking methods. Adjusts recipes for larger quantities and ensures food is ready at appropriate times. Records food temperatures and follows HACCP standards.
  • Prepares food for various outlets and catering, following procedures for mise-en-place, cooking, holding, chilling, reheating, and proper labeling.

Food Safety & Sanitation:

  • Handles all foods safely according to standards, monitors critical control points, and maintains cleanliness and sanitation. Achieves a score of 90% or better on health inspections. Dedicates the last 15 minutes of each shift to cleaning and sanitizing.

Other Duties as Applied

Required Qualifications
  • Oregon food handlers card or equivalent; AND
  • Food Protection Manager Certification within 6 months of hire; AND
  • Three years of cooking experience in an institution or commercial setting serving complete meals OR
  • An Associate’s degree in Food Service Management, Foods and Hospitality Service, or a related field.
Preferred Qualifications
  • High school diploma or GED
  • Five years of cooking experience
