Job summary

ARCTIC STORM MANAGEMENT GROUP LLC seeks a capable shipboard cook to prepare and serve meals for 130+ crew members on a fishing vessel. You will read recipes, manage supplies, and supervise galley assistants to ensure timely, safe, and tasty meals.

Responsibilities include cooking, baking, stocking, cleaning, and adhering to hygiene standards. This role requires physical stamina, teamwork, and flexibility during long voyages; Alaska-required certification preferred.

Job Description

Prepares and cooks a variety of meals and food options for vessel crews over 130 people.

Reporting

Reports to: Chief Steward.

Common Job Functions
  • Cooks midnight meal and breakfast according to menu and supplies.
  • Bakes assorted bread, pastry and desert items.
  • Uses appropriate equipment and sanitation procedures for cutting and or slicing: meats, vegetables and baked goods.
  • Able to read and follow recipes including: measuring, weights and preparation instructions.
  • Able to adapt recipes for group size, based on menu selection for the meal.
  • Works with the Chief Steward to plan menu items to ensure available supplies are fully used and to diversify meal options. Makes use foods in season and local availability when possible.
  • Maintains adequate supply of food for each meal, working with Galley Assistants to monitor steam tables, salad bar and snack options to ensure availability for crew.
  • Orders supplies and keeps records and accounts.
  • Directs activities of one or more workers who assist in preparing and serving meals.
  • Maintains a clean working environment. Responsible for cleaning kitchen and all dishes on a daily basis.
  • Assists with meal preparation, service and maintaining the steam and cold tables as directed. Assists with clean up and proper storage of left overs and ingredients.
  • Washes dishes, pots, pans and utensils during meal-times and throughout the day as needed. Includes maintaining the dishwasher supplies and cleanliness.
  • Maintains the cleanliness of the dining and lounge areas at all times. Includes: mopping the floors, cleaning tables, chairs, counters, condiment holders, walls and lounge areas.
  • Cleans and stocks beverage station in the dining area. Including coffee machines, juice and water dispensers
  • Stocks dining hall with items used by the crew, including condiments, cereal, bread, paper products, and utensils.
  • Cleans and fills steam tables, ensures steam table is powered on/off as required based on scheduled meal service.
  • Stocks all dining area condiments, cereals, bread, paper products and utensils.
  • Regularly stocks, fills and cleans all beverage stations including coffee pots, juice and water dispensers.
  • Assists the cooks with stocking galley supplies for the daily menus. Stocks and maintains cleanliness of dry storage and cooler areas.
  • Assists with preparing salad items, maintains a clean salad storage area at all times and monitors left-over storage and freezer area ensuring the freezer is clean and defrosted as needed.
Additional Duties
  • Assists the vessel Housekeeper as needed. Performing additional tasks as directed by the Chief Steward.
  • Participates in all backload and offload activities.
  • Learn and follow all hygiene and safety rules and protocols. Including using only approved cleaning products, and regular use of Personal Protective Equipment (PPE).
  • Participation in crew meetings, safety orientations and drills as required.
  • Operates safety sensitive equipment and machinery only with authorization and proper training.
  • Develop awareness of galley environment and potential hazards, immediately notifying supervisors and communicating with coworkers to maintain safe working conditions. .
Equipment Used
  • Typical Equipment: Automatic dishwasher, standard cleaning equipment, cleaning solutions, standard food preparation knives and utensils,
  • Standard Personal Protective Equipment: Hairnets, aprons, gloves. When necessary: hardhats, hearing protection devices, respirators, survival suits and life preservers.
Conditions On The Vessel
  • Shifts are 12 hours per day, 7 days a week for the duration of the fishing contract.
  • Contracts are seasonal, duration based on the season and the availability of fish.
  • Conditions in the galley may vary in temperature and weather will cause the vessel to move unexpectedly during operation.
  • Crewmembers are provided with a bunk, mattress and locker in crew quarters.
  • Crew lounge provides access to two computer kiosks for short-term usage during breaks.
Compensation And Benefits
  • Pay is crew share based with daily minimum guarantee.

Minimum Requirements
  • Current Alaska Food Worker certificate or ability to attain certification.
  • Prior work in food preparation, dishwashing preferred though not required.
Physical And Mental Expectations
  • Regularly requires the ability to receive instruction, communicate, read and identify signs and alerts in English. Regularly requires symbol recognition and memorization.
  • Standing for long periods of time, lifting up to 60lbs, pushing/pulling, reaching, twisting/turning, hand eye coordination. Movements occasionally include, bending/stooping, squatting/kneeling, climbing and crawling.
  • Able to navigate steep stairways, gangways, Jacob’s ladder and/or upper bunk unassisted.
  • Dexterity: able to work while wearing gloves, and maintain balance while walking/standing.
  • Visual acuity, with or without corrective lenses, capable of fine detail, and distance vision.
  • Able to adjust to shipboard working and living conditions in close quarters, far from home for long periods.
  • Ability to work as part of a team in a professional, respectful manner with coworkers, shipmates, company personnel and visitors.
Employee Responsibility
  • Employees taking medication or requiring eyeglasses or contacts need a backup pair/sufficient supply to last at least 90 days.
  • Maintains physical and dental health in preparation for work at sea, far from medical facilities, pharmacies or dental services.
  • Employees provide their own bedding: blanket, sheets and pillows. Large, thick blankets or sleeping bags require a removable duvet cover or sleeping bag liner for washing.
  • Enough clothing, socks, warm layers, to last 8-9 days between laundry dates, comfortable shoes for crew lounge/eating areas, and toiletries for up to 90 days.
