A leading healthcare provider in East Providence seeks a dedicated food service professional to prepare and distribute meals for patients and staff. The role involves planning cooking schedules, ensuring food quality, and managing food procurement. Candidates should have a solid background in cooking techniques and food safety principles. Summary:
Under the general supervision of the Food Services Supervisor, responsibilities include the preparation and distribution of food for hospital patients and staff.
Responsibilities:
PRINCIPAL DUTIES AND RESPONSIBILITIES:
- Consistently apply the corporate values of respect, honesty, and fairness, and pursue excellence in improving regional health through customer-friendly, accessible, high-value services within a comprehensive academic health system.
- Review menus and work orders to determine the type and quantity of meats, vegetables, soups, salads, and desserts to be prepared.
- Plan cooking schedules to ensure food is ready at specified times while maintaining nutritional quality, flavor, and appearance.
- Estimate food quantities and control serving portions to minimize waste and leftovers.
- Consult with the Food Service Supervisor regarding modified diet preparation and the use of leftovers.
- Procure or supervise procurement of food from refrigerators, freezers, or other storage areas.
- Trim and cut meat and poultry.
- Prepare or supervise washing, trimming, cooking, and seasoning of food items.
- Measure and mix ingredients according to recipes.
- Observe and taste food during preparation; adjust ingredients or seasonings to improve flavor, texture, and appearance. Test food for proper cooking by tasting and smelling.
- Adjust heat controls and timers on stoves, ovens, steam kettles, and grills.
- Prepare cold meats, sandwiches, snacks, and beverages.
- Inspect stored meat and other food items; recommend menu changes as needed.
Other information:
BASIC KNOWLEDGE:
Requires knowledge of cooking techniques and familiarity with cooking operations and procedures.
EXPERIENCE:
Equivalent to 2 to 3 years of experience in food service. Certified as Food Safety Manager by the National Registry of Food and Safety Professionals, with a comprehensive understanding of HACCP food safety principles.
