Job Summary
The cook will be responsible for preparing and serving meals according to the menu, monitoring methods of food handling, preparation, meal service, and equipment cleaning. Safely and efficiently provides nutritionally appropriate food. Ensures the provision of quality food service and nutrition care in accordance with Federal, State, and Local regulations. Qualifications
• High school diploma or equivalency preferred.
• Two years of experience as a cook in a large-scale operation preferred.
• One year’s work experience in long-term care preferred.
Responsibilities
• Prepares meal items according to planned menus and standardized recipes; refers to supervisor or dietitian for menu changes.
• Reviews menus, resident census information, production guides, and pre-prep sheets to determine food quantities.
• Prepares food following safe food handling guidelines per company policy and regulations;
• Assists with food ordering, storage, and preparation as designated; prepares food timely to maintain quality and serve on schedule.
• Maintains standards for food quality; uses nutritionally equivalent substitutes when needed; follows standardized recipes.
• Operates kitchen utensils and equipment such as blenders, mixers, slicers, steamers, food processors, ovens, ranges, and tilt skillets; cooks food by baking, roasting, broiling, and steaming.
• Prepares modified consistency and diet foods; assists with special function meals.
• Completes pre-preparation tasks like washing, peeling, and cutting vegetables and fruits; slices meats and measures ingredients for accuracy.
• Prepares and serves attractive food with garnishes; tastes for palatability.
• Monitors and records food temperatures before serving.
• Makes menu adjustments under supervision; uses substitutes with approval.
• Follows proper hygiene and food storage procedures; checks refrigerator and freezer temperatures.
• Cleans equipment and work area; follows cleaning schedules; manages trash and dishwashing as assigned.
• Ensures timely meal service.
• In absence of the Dietary Manager, the Dietary Aide reports to the Cook.
• Other duties may be assigned as needed.
