Job Overview

The Cook at Encore Hospitality is responsible for preparing and cooking high-quality dishes according to the restaurant’s standards and recipes. This role involves managing kitchen stations, maintaining cleanliness, and ensuring that all food served is prepared to meet both taste and presentation standards. The Cook plays a critical role in delivering an exceptional dining experience by providing delicious and visually appealing meals in a timely manner.

Key Responsibilities
  1. Food Preparation & Cooking
    • Prepare and cook a variety of dishes according to standardized recipes and menu specifications.
    • Ensure all food is cooked to the proper temperature and meets quality standards for taste and presentation.
    • Manage assigned kitchen stations efficiently, including grilling, sautéing, baking, or other cooking methods as required.
    • Assist with food preparation tasks such as chopping vegetables, marinating meats, and preparing sauces and dressings.
  2. Kitchen Organization & Cleanliness
    • Maintain a clean and organized kitchen environment, including workstations, utensils, and equipment.
    • Follow proper sanitation and hygiene procedures to ensure food safety and prevent contamination.
    • Clean and sanitize kitchen equipment, including stoves, ovens, grills, and fryers, as well as utensils and cooking surfaces.
    • Dispose of waste properly and ensure kitchen areas are free from hazards.
  3. Inventory & Stock Management
    • Monitor inventory levels of ingredients and supplies, reporting shortages or discrepancies to the Kitchen Manager.
    • Assist in receiving and storing deliveries, ensuring that all products are stored correctly and are fresh.
    • Manage and rotate stock to prevent spoilage and maintain quality standards.
  4. Quality Control
    • Ensure that all dishes are prepared according to recipe specifications, including portion sizes and presentation standards.
    • Conduct regular taste tests and quality checks to ensure consistency and adherence to food safety standards.
    • Address and correct any issues with food quality, taste, or presentation promptly.
  5. Team Collaboration
    • Work closely with other kitchen staff, including chefs, sous chefs, and prep cooks, to ensure efficient kitchen operations.
    • Communicate effectively with front‑of‑house staff to coordinate the timing of meal service and manage special requests.
    • Assist in training and mentoring new kitchen staff as needed.
  6. Compliance & Safety
    • Adhere to all health and safety regulations, including proper handling of food, cleaning procedures, and personal hygiene.
    • Follow all protocols for emergency situations, such as fires or kitchen accidents, and report any safety hazards to the Kitchen Manager.
    • Maintain knowledge of food allergies and dietary restrictions to ensure guest safety and satisfaction.
  7. Menu & Recipe Development
    • Contribute ideas for menu items, specials, and improvements based on guest feedback and current food trends.
    • Assist in the development and testing of new recipes, ensuring they meet the restaurant’s quality standards and operational requirements.

Physical Requirements
  • Ability to stand and work for long periods, including bending, reaching, and lifting.

Work Environment
  • Fast‑paced kitchen environment with exposure to heat, steam, and various kitchen equipment.
