Job summary

Compass Group USA at T-Mobile Arena is seeking a Concessions Lead Cook to prep, prepare, and cook products per recipes while following food safety and sanitation guidelines.

The ideal candidate has basic kitchen knowledge, knife skills, and the ability to run a station solo; must be punctual, reliable, and able to work nights, weekends, and holidays.

• Punctual, reliable, and available for scheduled shifts, including nights, weekends, and holidays on event basis.
• Ability to stand, walk, stoop, kneel, crouch and bend.

Responsibilities

• Oversee cooking activities of food service associates as assigned by Food Service Director.
• Prepares various entrees and menu items following established recipes.
• Knows menu items specific to position.
• Operates and cleans equipment after each use. Performs scheduled routine cleaning.
• Stores, labels and dates food items according to policy. Helps maintain organized storage of dry goods and refrigerated and frozen products.
• Follows HACCP guidelines to ensure quality and safety of food supply.
• Assists Food Service Director in maintaining daily production records and completing required documentation.

Summary

The Concessions Lead Cook is responsible for prepping, preparing, and cooking products according to recipe specifications and food safety and sanitation guidelines. The individual should have a reasonable knowledge base of fundamentals of the kitchen, including knife skills and organization. The Cook has the ability of running a station solo.

Essential Duties and Responsibilities

• May oversee the cooking activities of food service associates as assigned by Food Service Director.
• Prepares various entrees and menu items following established recipes.
• Knows menu items specific to position.
• Operates and cleans equipment after each use. Performs scheduled routine cleaning.
• Stores, labels and dates food items according to policy. Helps maintain organized storage of dry goods and refrigerated and frozen products.
• Follows HACCP guidelines to ensure quality and safety of food supply.
• Understands and follows production guidelines and location appearance guidelines.
• Adheres to Levy guidelines as stated in team member training manual and employee handbook.
• Thoroughly completes all set-up and breakdown responsibilities.
• Practices proper product control and handling of all inventory and equipment.
• Complies with federal, state and local health and sanitation regulations and department sanitation procedures.
• Assists Food Service Director in maintaining accurate daily production records and completes all required documentation, reports, and logs as assigned.
• Assists in the cross training of employees.
• Reports issues to management.
• Helps fellow team members whenever necessary.
• Displays a positive attitude toward teammates, managers and other groups.
• Always on time and ready to perform all required duties.
• Assist with assigning duties
• Performs other duties as assigned.

Job Duties

• Be punctual, reliable and available for scheduled shifts, including nights, weekends, and holidays on event basis.
• Adapt quickly to fast-paced, high-volume environments.
• Demonstrate physical stamina and agility required to be mobile for long periods throughout the day and stand for duration of entire shift.
• Ability to obtain and maintain required work cards including SNHD Health Card, ServSafe Alcohol Card, Non-Gaming Card.
• Ability to effectively communicate in English in written and oral form.
• Ability to stand, walk, stoop, kneel, crouch and bend.
