As a Commissary Kitchen Manager, you will oversee all aspects of the commissary operation, including ensuring product quality, supervising staff, managing inventory, scheduling, budgeting, purchasing, recipe creation, and coordinating food deliveries. You will be responsible for preparing, assembling, packing, weighing, recording, and transporting food items efficiently while adhering to safety, sanitation, and food handling procedures. Effective communication among staff and stores is essential.

Responsibilities:

  • Build and maintain customer satisfaction with products and services.
  • Maintain a clean, full, and fresh department.
  • Train and supervise staff, ensuring adherence to procedures and customer service standards.
  • Schedule shifts to ensure proper coverage.
  • Provide feedback, conduct performance evaluations, and offer training opportunities.
  • Monitor inventory levels, order products, and implement control measures to ensure freshness and minimize waste.
  • Ensure all products meet quality and safety standards.
  • Conduct safety training for staff and oversee cleaning and maintenance of work areas.
  • Possess knowledge of cooking and proper use of kitchen equipment.
  • Manage stock levels and inventory, focusing on minimizing waste and shrinkage.
  • Handle purchasing, monitor deliveries, and scout for best prices without compromising quality.
  • Supervise staff, including hiring, training, and ensuring policy adherence, including vehicle maintenance and compliance with laws.
  • Ensure quality control of food items leaving the facility.
  • Manage financial aspects such as budgeting, billing, supplies, and payroll.
  • Perform price matching and cost analysis for ingredients and meals.
  • Perform other duties as assigned and adhere to safety standards.
  • Work in varying temperature environments.

Experience:

  • Preferred: 1+ year in management and food service.
  • ServeSafe certification or equivalent.

Skills:

  • Physical abilities: Ability to lift up to 85 lbs, stand, bend, and twist for most of the shift, work in temperature-controlled environments, and walk on various flooring.
  • Communication Skills: Clear and effective communication with team and leadership.
  • Organizational Skills: Ability to fulfill orders promptly, prioritize, and meet deadlines.
  • Teamwork: Capable of working independently and collaboratively.
