Job description

Splendido Mare, A Belmond Hotel, part of the LVMH Group, is a charming guesthouse in the heart of Portofino. Its celebrated restaurant, DaV Mare, embodies all the pleasures of piazzetta living through refined cuisine, curated in partnership with the 3-Michelin-star Cerea family. Awash with nautical spirit, our gem on the Italian Riviera celebrates the art of Ligurian living in its purest form.

We are looking for a Commis de Rang for the next season 2025 to join our restaurant team.

The ideal candidate is open to new challenges and ready to constantly develop themselves further. He/she is willing to support the team to provide authentic and luxury dining experiences, demonstrating care, curiosity, and community.

Main duties & responsibilities:

  1. Fulfil the operations according to the Company policies, high standards, and procedures.
  2. Take care of the mise en place.
  3. Support the Chef de Rang with service.
  4. Clean and set up floors, tables, chairs, linens, glass, and silver for service.
  5. Monitor all aspects of the customers' experience, from the restaurant layout before they arrive to the service they receive. Act to enhance flawless service and anticipate guests’ needs.
  6. Effective communication: communicate clearly and in an appropriate manner (both verbally and non-verbally).
  7. Emotional intelligence: demonstrate sensitivity to the needs and emotions of guests and colleagues and adjust style accordingly. Manage own emotions in challenging situations.
  8. Adaptability: identify when a different approach is needed and offer solutions. Try and adopt new ways of doing things.
  9. Collaboration: be able and willing to work as a team player. Share information and skills and actively seek and provide feedback.

Other requirements:

  1. Fluent in Italian and basic level of English.
  2. Tourism or Hospitality degree preferred.
  3. Previous professional experience in a similar role, including school internships.
  4. Passion for service and ambition to grow professionally.
  5. References.
  6. HACCP Certification.
  7. Good knowledge of wines (AIS certification is a plus).

We offer:

  1. Seasonal Labour contract according to C.C.N.L. Settore Turismo - Level 6s, Commis de Rang.
  2. Start date: July 2024 to End date: October 2024, with the aim of a continuous collaboration over subsequent seasons at Splendido and a career path.
  3. Salary as per CCNL, separate payslip for 13°, 14° and TFR.
  4. Monthly welfare incentive based on quality goals + welcome bonus.
  5. Accommodation in our staff house including breakfast.
  6. Bus ticket as benefit for the contract period; staff canteen.
