Chef/Cook full-time, Remote lodge in Sitka, Alaska

THE CHANNEL CLUB SITKA LLC

We are seeking a Chef/Cook for a full-time position at a remote fishing lodge in Sitka, Alaska.

The Chef/Cook will work at a full-service fishing lodge serving breakfast, appetizers, dinner, and dessert to fishing guests. The lodge operates approximately 7 days per week from mid-May through the first week of September each season. Guest groups typically consist of 12-19 people.

The menu includes:

  • Breakfast: rotating menu with pancakes w/bacon, ham and cheese omelettes, french toast and sausage, biscuits and gravy, breakfast burritos (served on the boat on some trips)
  • Afternoon: buffet-style appetizers such as soups and finger foods upon guest arrival
  • Dinners: rotating menu featuring halibut, pork chops, prime rib, and salmon (for 4-day trips), each served with sides and vegetables
  • Evening: fresh salads and bread (rolls or garlic bread), with desserts rotating daily

Typical daily schedule:

  • Breakfast served at 5:15am, starting at 4am
  • Appetizers served 4-4:30pm, depending on guest arrival from fishing
  • Dinner: salads at 6pm, plated dinner at 6:15pm, desserts by 6:50pm

Responsibilities include being a self-starter, maintaining good organizational and sanitary standards, cooking for large groups, accommodating special diets, and judging meal preparation times accurately. Prime rib is the signature meal on the last night, requiring proper preparation skills.

Staff schedules:

  • Morning staff arrive at 4:30am for breakfast service and cleanup
  • Afternoon staff arrive at 3pm for service, with additional staff arriving at 4pm for cleanup and dinner
