Requirements of the Chef Manager/Executive Chef:
- Must possess, as a minimum, a high school diploma or GED
- Must graduate from an accredited course in dietetic training approved by the American Dietetic Association
- Must possess a Food Service Sanitation (ServSafe) certification
- Culinary or Hospitality Degree Preferred
- CDM Certification Preferred
- Must have at least one (1) year of experience in a supervisory capacity in a hospital, nursing care facility, or related medical facility
- Must have at least one (1) year of culinary supervisory experience in a hospital, nursing care facility, Long Term Care, Rehabilitation facility, or related medical setting
- Training in cost control, food management, diet therapy, etc.
- Ability to prepare and enforce all food textures for residents on different diets
- Knowledge of dietary practices, laws, regulations, and guidelines in nursing care facilities
- Ability to follow recipes and recalculate as needed for production
- Ability to interpret Dining Services cost reports and financial data
- Ability to relate information concerning a resident’s condition
- Successful completion of a post-offer, pre-employment criminal background check and physical/drug screen
Responsibilities of the Chef Manager/Executive Chef:
- Assist the Director of Dietary in planning, organizing, and developing the Dietary Department according to standards and regulations
- Ensure the facility is maintained in a clean, safe, and comfortable manner
- Conduct weekly inspections of dietary functions to maintain quality control
- Assist dietary staff as needed
- Coordinate dietary services with other departments (Nursing, Activities, Housekeeping, etc.)
- Submit accident and incident reports within 24 hours
- Inspect dietary areas for cleanliness, supply control, and safety
- Participate in surveys and inspections
- Provide excellent hospitality and communication to residents, families, guests, and staff
- Ensure compliance with laws, regulations, and guidelines governing dietary functions
- Maintain supplies and equipment, and ensure sanitation and safety in dining areas
- Relate information concerning a resident’s condition as needed
