Job summary

Target Hospitality in TX is seeking a Chef II to assist the Chef and cooks with daily menu preparation, meet production quotas, and prepare made-to-order items while upholding HACCP and food safety in a high-volume lodge kitchen.

The role requires 2+ years cooking experience, strong English communication, and the ability to work a 6 weeks on / 2 weeks off rotation. Candidates should be able to operate kitchen equipment safely and maintain sanitation standards in a remote camp setting.

Qualifications

  • 2+ years culinary experience in hospitality, preferably remote camp or hotel environment.
  • Ability to communicate effectively, both written and orally, in English.
  • Valid food safety certification is an asset.
  • First aid certification is an asset.
  • Ability to work within a team and with or without supervision.
  • Willingness to travel and work long rotations away from home.

Responsibilities

  • Maintain a safety culture and follow SOPs, JSAs, and Target Hospitality policies.
  • Operate kitchen equipment safely (grills, slicers, tilt skillets, deep fryers, ovens).
  • Prepare menu items to plan, meeting production quotas.
  • Prepare breakfasts to order (omelettes, eggs).
  • Serve guests and check meal scans; ensure HACCP compliance.
  • Store, rotate, and discard expired food per HACCP and FIFO.

Scope:Responsible for assisting the Chef and other cooks with daily menu preparation, meeting production quotas and preparing made-to-order items while maintaining HACCP and food safety standards in a high-volume lodge kitchen.

PRIMARY RESPONSIBILITIES
  • Accountable and responsible for maintaining a safety culture, following all SOPs, JSAs, and policies and procedures as set out by Target Hospitality.
  • Must be able to safely operate kitchen equipment, including but not limited to grills, slicers, tilt skillets, deep fryers, and convection ovens.
  • Ensure adequate quantities of the menu choices are prepared as per the menu plan, following production quotas as indicated by the Chef.
  • Prepare meals on the line, grill, oven, and fryers.
  • Prepare breakfasts to order, such as omelettes and eggs.
  • Serve guests and check for meal scans.
  • Serve all foods in accordance with HACCP and food safety standards.
  • Proper food storage, rotation, and discarding of expired food in accordance with HACCP and FIFO guidelines.
  • Ensure proper utensils are used for serving, portion control, and sanitation purposes.
  • Exceed our guests’ needs by providing world-class customer service.
  • Attend all safety meetings and participate in Target Hospitality emergency response procedures.
  • Additional duties may be assigned by a supervisor or manager.
PHYSICAL DEMANDS
  • Stand for long periods of time, up to 12 hours or longer, with scheduled breaks.
  • Short- and long-distance walking required.
  • Use of stairs and step stools.
  • Use force when pushing and pulling carts that weigh on average 50 lbs.
  • Frequently lift an average weight of 25 lbs with a maximum of 50 lbs. Where weights may exceed 50 lbs, the assistance of another person or a lifting aid is mandatory.
  • Frequently reach below waist, waist to shoulder, and above shoulder, with frequent neck, back, and torso twisting from left to right without restriction.
  • Perform repetitive movements at the wrist, including side to side and up or down, and multiple grasps of an average of 10 lbs with a maximum of 25 lbs.
  • Simple, power, and fine finger manipulation for the duration of an average 12-hour shift.
WORKING CONDITIONS AND ENVIRONMENT
  • Ability to hear and understand verbal instruction as well as other sounds such as safety alarms and signals.
  • Must be able to see without impairment for inspection purposes, and able to read small text such as product warning labels.
  • Exposure to extreme hot and cold environments.
  • Ability to work within a rotational schedule of 6 weeks on and 2 weeks off, or as per manager’s discretion and business needs.
  • Ability to work safely and navigate within small, close quarters and congested areas.
  • May be exposed periodically to elevated noise and surroundings.
QUALIFICATIONS
  • 2+ years culinary experience, preferably in a remote camp or the hotel/hospitality industry, or equivalent.
  • Ability to communicate effectively, both written and orally, in English.
  • Valid food safety certification is an asset.
  • First aid certification is an asset.
  • Ability to work within a team environment.
  • Must be able to work effectively and efficiently with or without supervision.
  • Strong prioritization and time management skills.
  • Ability and willingness to travel and work long rotations away from home.
  • Must be able to pass a background check and urinalysis.
  • Must provide your own transportation to and from the facility.
