Job summary

The Hyatt Regency Dallas is seeking an experienced Chef de Cuisine to lead four outlets in a high-volume, luxury hotel setting downtown Dallas. You will collaborate with the Executive Chef to set culinary direction, oversee menu development, and ensure guest satisfaction.

This role requires mentoring the culinary team, managing costs and labor, maintaining Hyatt standards, and coordinating with events, catering, and room service.

Qualifications

  • Culinary Arts Degree preferred; hotel experience preferred.
  • 5–7 years of progressive culinary leadership in high-volume settings.
  • Experience overseeing multiple outlets or complex kitchen operations.
  • Training, customer service, labor management, and basic financial management.
  • Strong understanding of food costing, inventory, purchasing, and labor management.
  • Proficiency in Microsoft Office (Word, Excel, PowerPoint, Outlook).
  • Strong leadership, communication, organizational, problem-solving skills.
  • Ability to manage multiple priorities with attention to detail.
  • Full schedule flexibility including evenings, weekends, holidays, and events.
  • Ability to stand, walk, and lift up to 50 pounds.

Position Summary

The Hyatt Regency Dallas is seeking an experienced Chef de Cuisine to join our highly skilled and recognized Culinary team. Located in downtown Dallas adjacent to the iconic Reunion Tower, Hyatt Regency Dallas offers an exciting opportunity for a culinary leader seeking professional growth and career advancement within a world-class hospitality organization.

The Chef de Cuisine is responsible for leading and managing all culinary operations in collaboration with the Executive Chef and Executive Sous Chef. This role oversees four distinct food and beverage outlets, including the all-day dining restaurant, specialty restaurant, room service operation, and bar and lounge. The Chef de Cuisine will create, implement, and maintain a high-quality, consistent guest experience while driving culinary excellence, operational performance, financial results, and team development.

The ideal candidate brings inspiration, culinary expertise, creativity, knowledge of industry trends, menu development skills, and a passion for mentoring culinary talent. This position performs in a fast-paced, high-volume environment and plays a critical role in maintaining Hyatt's standards for quality, service, and guest satisfaction.

Responsibilities
Operations Management
  • Develop and implement creative menu items, in collaboration with the Executive Chef and Executive Sous Chef, that align with Hyatt brand standards while meeting guest expectations and market trends.
  • Supervise the preparation, production, and presentation of food items to ensure the highest standards of quality, consistency, freshness, and flavor.
  • Establish and maintain standard operating procedures and culinary standards.
  • Plan, coordinate, and execute special events, holiday functions, catering support, and other hotel programming as needed.
  • Monitor equipment performance and coordinate repair and replacement requirements.
  • Ensure efficient communication and collaboration across departments.
Team Leadership & Development
  • Lead, inspire, coach, and develop culinary colleagues to achieve exceptional guest service and colleague satisfaction.
  • Foster a culture of accountability, teamwork, professionalism, and continuous improvement.
  • Conduct hiring, onboarding, training, coaching, performance evaluations, and succession planning.
  • Manage scheduling, payroll, labor deployment, and staffing levels to support business demands.
Financial Management
  • Monitor and manage food production costs, purchasing, ordering, inventory, and quality controls.
  • Analyze food cost, labor cost, sales trends, inventory variances, and overall financial performance.
  • Support profitability goals while maintaining exceptional quality standards.
Food Safety & Compliance
  • Ensure compliance with all local, state, company, and Hyatt food safety standards.
  • Maintain HACCP, sanitation, workplace safety, and health department compliance requirements.
  • Conduct routine inspections and implement corrective actions when necessary.
  • Ensure proper receiving, storage, labeling, and handling of all food products.
  • Maintain readiness for health inspections and operational audits.
Qualifications
  • Culinary Arts Degree preferred; previous hotel experience preferred.
  • Minimum 5-7 years of progressive culinary leadership experience, preferably in a hotel, resort, club, airport hospitality, or high-volume foodservice environment.
  • Demonstrated experience overseeing multiple outlets or complex culinary operations with in-depth skills and knowledge of all kitchen operations.
  • Experience with training, customer service, labor management, and basic financial management.
  • Strong understanding of food costing, inventory controls, purchasing, and labor management.
  • Proficiency in Microsoft Office, including Word, Excel, PowerPoint, and Outlook.
  • Strong leadership, communication, organizational, problem-solving and relationship-building skills.
  • A genuine desire to exceed guest expectations.
  • Ability to manage multiple priorities while maintaining attention to detail.
  • Full schedule flexibility, including evenings, weekends, holidays, and special events.
  • Ability to stand and walk for extended periods.
  • Ability to lift and carry up to 50 pounds.
  • Ability to work in varied kitchen environments with exposure to heat, cold, steam, and noise.
