• Education: High School Diploma or equivalent preferred.
• Must read and follow documents and procedures (GLP, SOP, SDS, GMP, test procedures, HACCP).
• Strong attention to detail and accuracy in work.

Responsibilities

• Understand all brine room controls, PLC, and operation of equipment.
• Understand Brine UF system CIP and sanitation.
• Fill brine cages with cheese and record each vat on the log.
• Ensure proper recipe, monitor pH per guidelines, and log results.
• Operate cookers, salters, and RMC; ensure readiness for production.
• Perform CIP, clean equipment daily, and rinse floors.
• Maintain equipment cleanliness and replace gaskets as needed.
