Job summary

Lake Drive Care & Rehabilitation Center seeks a Certified Dietary Supervisor to lead therapeutic menu planning, supervise kitchen staff, and ensure high-quality nutrition for residents. You will manage costs, maintain standardized recipes, and collaborate with a Contract Dietician to monitor residents’ nutritional status.

Qualifications

• High school diploma or equivalent required.
• Within two years, obtain CDM certification via the CDM board.
• Current CDM certification is a plus.
• 1 year of kitchen experience desired.
• Ability to communicate with residents and families.
• Ability to work cooperatively as part of a team.
• Strong organization and management skills.

Responsibilities

• Determine quantities and plan master menus; supervise therapeutic menus.
• Oversee menu planning, production, and staff workflows.
• Ensure nutritious, economical food preparation and recipe standardization.
• Plan menus, purchase food, and adapt cycles with a Dietician.
• Check food for flavor, temperature, and appearance regularly.
• Monitor residents' nutritional status with a Dietician.
• Prepare annual departmental budget and manage inventory.
• Inspect all work and storage; ensure regulatory compliance.

Essential Functions of Certified Dietary Supervisor:

• Determine quality and quantity of food required plans and prepares master menus. Supervises the planning of menus for therapeutic diets, and controls food costs
• Supervises food production and service programs, as well as departmental staff involved
• Ensure food preparation for optimal nutrition and economic handling of food, as well as efficient usage of time. Maintain and issue a file of standardized recipes adjusted to the proper yield
• Plan menus, purchase food and assign duties for special functions. Adapt master menu cycle to individual and Center preference with Consultant Dietician
• Check food for flavor, temperature, and appearance on a regular basis
• With Contract Dietician, monitor nutritional status of residents using regular assessments, progress notes and dietary care planning
• Prepare departmental budget on an annual basis
• Maintains inventory of kitchen tools and food supplies
• Make frequent inspection of all work, storage
• Assures all regulatory requirements are met for the preparation, storage and nutritional aspects of residential food program

Qualifications of Certified Dietary Supervisor:

• High school diploma or general equivalency is required
• Within two (2) years of job start, must attain certification as Certified Dietary Manager (CDM) via Association of Nutrition & Foodservice Professionals / Certifying Board for Dietary Managers.
• Current and active certification as CDM is a plus!
• 1 year of progressively responsible experience in a commercial kitchen is desired
• Candidates must maintain a working email address and phone number for employer communication.
• Ability to work cooperatively as a member of a team
• Ability to communicate effectively with residents and their family members, and at all levels of the organization
• Ability to react decisively and quickly in emergency situations
• Ability to maintain confidentiality
• Ability to read, write and speak the English Language
• Organization and management skills
