Levy Restaurants at Memphis Zoo is seeking a Catering Sales Manager to coordinate and oversee internal and external catering events, ensuring exceptional service and client satisfaction. The role supports menu development, budgeting and vendor management while coordinating with culinary teams and operations staff.

The position requires leadership of event teams, strong negotiation skills, and a focus on delivering high-end, memorable experiences for diverse guests.

Qualifications

• Bachelor’s degree or equivalent professional experience.
• Min two years in hospitality including catering sales.
• Strong communication and problem-solving skills.
• Excellent leadership and organizational abilities; detail-oriented.
• Advanced Excel and PowerPoint skills.

Responsibilities

• Hires, trains hourly staff and supervisors, including coaching as needed.
• Manages full life-cycle of catering functions: menu costing, marketing, labor and food cost control.
• Collaborates with Culinary team to write menu proposals.
• Creates operating statements, budgets and forecasts; manages receivables.
• Supervises food prep, transport, setup, operation and cleanup.
• Develops proposals, contracts and banquet event orders (BEOs).
• Maintains client databases and vendor relationships; ensures HACCP compliance.

Catering Sales Manager - Memphis Zoo

Summary: The Catering Sales Manager at Memphis Zoo coordinates & oversees internal and external catering events.

This position is targeted for a mid-December 2026 start date.

Key Responsibilities

• Hires, schedules, trains develops hourly event staff & supervisors, including corrective action and coaching as needed.
• Manages full life-cycle of catering related functions, from menu development, costing, and marketing functions; utilize labor & food cost control, books, plans, and directs functions, reconciles billing and verifies all appropriate payments.
• Actively involved in the development of service techniques, menu presentation, policies and procedures.
• Collaborate/consult with Culinary team to write menu proposals.
• Creates operating statements, reports, and operational budgets, reviews the collection of receivables.
• Supervise food preparation, transportation, set-up, operation and clean-up.
• Creates proposals, contracts and banquet event orders (BEOs).
• Prepares and monitors budgets; financial targets and forecasts.
• Serve as Subject Matter Expert (SME) as needed on Audio-Visual equipment, including set-up, break-down, troubleshooting.
• Maintains local client database, builds and maintains relationships with vendors.
• Ensures all safety and sanitation procedures are followed in compliance with HACCP.
• Demonstrates strong knowledge of current food, industry trends & fine dining points of service.
• Demonstrate proactive mindset and ability to remain clam under pressure, anticipate changes, and manage high-pressure guest interactions.
• Assess and deliver on client requirements, ensuring satisfaction, retention, return, and referral.
• Other duties & projects as needed.
• Be nice.

Preferred Qualifications

Bachelor’s degree or equivalent professional experience, including proven track record for meeting sales goals.

Min two (2) years of experience in hospitality industry including one year experience in catering sales.

Superior quantitative, oral and written communications and problem-solving/strategizing skills.

Excellent leadership and organizational skills, flexible and adaptable to constant changes and must possess attention to detail.

Excellent overall computer skills with advanced knowledge of Excel and PowerPoint.

Demonstrate high standards of personal integrity and ethical behavior.

Exceptional client relations and customer service abilities.
