Job Summary

Do you enjoy crafting and implementing innovative culinary solutions? We are seeking a Campus Executive Chef at the University of North Carolina - Asheville in Asheville, NC. You will be the lead culinarian for our dining programs, spearheading menu development, supervision of budgeting and food costs, ensuring client and customer satisfaction, and fostering employee training and growth. With Chartwells' rapid growth, there is significant potential for professional advancement and immediate impact in our culinary landscape!

Key Responsibilities:
  1. Plan menus according to established guidelines, following standardized recipes, portioning, and presentation standards.
  2. Complete and utilize daily production worksheets and waste logs.
  3. Supervise and train chefs, cooks, and team members on food preparation, presentation, safe handling, equipment operation, and sanitation.
  4. Ensure culinary standards, including recipe compliance and food quality, are met.
  5. Manage inventory of food and supplies, maintaining compliance while ensuring availability.
  6. Follow health and sanitation regulations, as evidenced through audits.
  7. Assist in forecasting food and labor costs and monitor financial results.
  8. Build strong client relationships to align programs with their objectives, enhancing satisfaction and retention.
  9. Perform other duties as assigned to support dining operations.
Preferred Qualifications:
  • A.S. degree or equivalent experience.
  • Three+ years of culinary or kitchen management experience, depending on formal training.
  • Experience in high-volume, hands-on foodservice operations.
  • Computer proficiency.
  • ServSafe Certification.
