Craft New York - Butcher Position

Craft New York, a Tom Colicchio restaurant located at 19th Street & Park Ave. South, is seeking its next Butcher to join our growing team.

The Butcher is responsible for ensuring the highest standards of food quality, sanitation, and cleanliness within the prep kitchen, walk-ins, and dry storage areas. Key responsibilities include managing the restaurant's meat and fish programs, receiving deliveries, maintaining proper storage and temperatures, and organizing proteins in accordance with FIFO procedures and health standards.

Responsibilities:
  1. Maintain proper tools and ensure knives are sharp for quality butchery.
  2. Verify that product quantities match purchase orders upon delivery.
  3. Receive only high-quality meat and fish, signing the invoice accordingly.
  4. Prioritize daily tasks to meet production needs efficiently.
  5. Perform precise butchering according to the Back-of-House team's instructions.
  6. Complete daily butchering tasks to support restaurant operations.
  7. Assist in stock production activities such as straining, cooling, and storing.
  8. Properly date, label, and store proteins.
  9. Keep meat and fish walk-ins organized per FIFO and health regulations.
  10. Change ice on proteins as needed throughout shifts.
  11. Conduct weekly deep cleaning of walk-ins.
  12. Maintain cleanliness and sanitation of the butcher station and overall kitchen environment.
Qualifications:
  • Basic butchering skills and knowledge of operating kitchen equipment (knives, stove, ovens, fryers, pasta equipment).
  • Ability to work various shifts.
  • Commitment to safe work practices.
