Fox Bros. Bar-B-Q is looking for a skilled and motivated Butcher to join our culinary team. As a butcher, you will be responsible for breaking down primal cuts, trimming meats for service and smoking, ensuring consistent portioning, and maintaining the highest standards of cleanliness and food safety. You’ll play a key role in upholding the quality and flavor that make Fox Bros. a Southern BBQ institution.

Key Responsibilities

  • Break down whole animals and primal cuts (beef, pork, poultry) according to Fox Bros. BBQ specs.
  • Trim, portion, and prepare meats for smoking, curing, or grilling.
  • Maintain inventory of meats and supplies; alert chef/manager to low stock.
  • Ensure all meat is stored and labeled correctly, following proper rotation (FIFO).
  • Maintain cleanliness and sanitation of all tools, cutting boards, and work areas.
  • Work closely with the pitmasters and prep team to coordinate daily meat needs.
  • Follow all health and safety regulations and company procedures.

Qualifications

  • Proven experience as a butcher or meat cutter (2+ years preferred).
  • Knowledge of meat cuts, trimming techniques, and portion control.
  • Ability to work quickly, efficiently, and cleanly in a fast-paced environment.
  • Strong attention to detail and knife skills.
  • Ability to lift 50+ lbs and stand for extended periods.
  • Team player with a positive attitude and strong work ethic.

Preferred Experience

  • Prior work in BBQ, smokehouse, or whole-animal butchery.
  • Familiarity with Southern-style cuts and preparation techniques.
  • ServSafe certification or equivalent (or willing to obtain).
