Job Overview

To ensure proper service from the front line through quality control, training of line cooks, and maintaining proper sanitation levels.

Responsibilities
  • Check all items against the recipe cards, verify that use records are followed for all items served, and that food is presented in an efficient, quality manner.
  • Monitor the line setup prior to all meal functions to ensure maximum efficiency during meal periods.
  • Monitor equipment maintenance and enforce the kitchen "clean as you go" policy to ensure strict adherence.
  • Prepare food of consistent quality following recipe cards and production and portion standards, based on server orders.
  • Start food items that are prepared ahead of time, ensuring not to prepare more than needed.
  • Date all food containers and rotate stock as per SOP, ensuring perishables are kept at proper temperatures.
  • Check pars for shift use, determine necessary preparation, freezer pulls, and line setup.
  • Note any out-of-stock items or potential shortages.
  • Assist in keeping buffet stocked.
  • Return unused food items to designated storage areas, covering and dating perishables appropriately.
  • Assist in planning and implementing actions to control food costs, waste, loss, and usage per SOP.
Qualifications

Education/Formal Training

High school diploma or equivalent.

Experience

One to two years of relevant experience in a similar role within this or other organizations.

Knowledge/Skills

  • Knowledge of cooking practices and kitchen procedures to perform analytical tasks.
Physical Demands

  • Lifting, pushing, pulling, and carrying items up to 70 lbs, including food and small equipment, approximately 75% of the time.
  • Periodic climbing.
  • Bending necessary when using lower ovens, 5-10 times daily.
  • Full mobility and ability to travel 30-50 feet throughout the day.
  • Continuous standing during preparation, service, or expediting.
  • Ability to hear equipment timers and communicate with staff.
  • Visual ability to ensure proper food preparation.
  • Ability to understand and follow verbal and written instructions and communicate effectively.
Environment

Primarily inside (95% of 8 hours). Freezer temperatures can reach -10°C. Front-line temperatures can exceed 100°F.

Salary

USD $24.81 per hour.
