Job Description

Position Summary

The Banquet/Sous Chef AM collaborates with the Banquet Manager, Pastry Chef, and Catering department to plan and execute food services for events. They support the Banquet Chef by maintaining high standards in cuisine quality, cleanliness, communication, cost management, professionalism, and innovation. This role reports to the Executive Chef.

The salary range is $60,000 - $70,000, dependent on experience and budget, with eligibility for bonuses.

Essential Job Functions

  1. Assist the Executive Chef in menu planning and food operations.
  2. Manage kitchen organization and coordinate staff for banquets and live stations.
  3. Analyze labor costs and assist in budget management.
  4. Create weekly schedules for the culinary team.
  5. Train staff on equipment use, hotel policies, and culinary standards.
  6. Organize and manage event equipment and supplies.
  7. Oversee food inventories, purchasing, and storage.
  8. Handle leftover food after events.
  9. Create daily production lists and update logs and reports.
  10. Manage systems related to banquet operations, including ordering and scheduling.
  11. Ensure maintenance and sanitation of kitchen equipment, monitor food temperatures, and keep storage areas clean.
  12. Perform other duties as assigned.

Qualifications

Education & Experience

  • Culinary Degree or equivalent preferred.
  • Minimum 5 years of culinary experience.
  • At least 2 years as an Executive Sous Chef in a luxury hotel or multi-outlet restaurant.

Knowledge, Skills & Abilities

  • Extensive culinary techniques and kitchen operations knowledge.
  • Strong leadership and team management skills.
  • Ability to develop creative menus within cost constraints.
  • Knowledge of food safety, sanitation, HACCP standards.
  • Proficiency in math, inventory, and vendor management.
  • Excellent organizational, problem-solving, and communication skills.
  • Experience with banquet and event catering.
  • Proficiency with Microsoft Office and kitchen management software.

Additional Information

Work Environment & Physical Demands

  • Must be able to stand, walk, reach, crouch, and handle physical tasks, including lifting up to 50 lbs.
  • Work in wet, hot, humid conditions, and on uneven surfaces as needed.
