The role involves providing technical and administrative support to the Banquet Chef, ensuring the efficient operation of the kitchen and food production outlets.

Responsibilities
  • Schedule staff according to budget and business forecasts
  • Develop new menu additions
  • Train staff
  • Ensure product availability for all restaurant and banquet items
  • Maintain sanitation of all kitchen facilities and equipment
  • Ensure all kitchen equipment is in good working condition
  • Oversee maintenance of walk-in coolers, including food rotation and cleanliness
  • Monitor and control daily food production
  • Ensure staff safety
  • Maintain good relations with the Front of the House Manager
  • Conduct daily meetings with servers and kitchen staff to discuss menu updates and operational concerns
  • Communicate expectations clearly and ensure staff adherence
  • Manage sign-in and sign-out procedures for kitchen staff
  • Hold kitchen department meetings
Qualifications
  • At least 2 years of culinary management experience in a high-volume, full-service banquet or restaurant kitchen
  • College degree and/or culinary certification preferred
  • Creativity and awareness of current food trends
  • Proven leadership skills with ability to train, develop, and motivate staff
  • Excellent communication skills in English, both verbal and written
  • Strong organizational skills with the ability to multitask
  • Experience managing schedules, inventory, payroll, and staff relations
  • Knowledge of batch and quantity cooking
  • Proficiency with culinary tools and equipment, including taste and smell discrimination
  • Serve Safe certification required
  • Physical ability to lift, push, pull, and carry up to 40 lbs, and stand for extended periods
  • Flexibility to work various shifts, including weekends and holidays
