Job summary

Job Title: Bakery Manager

Department: Bakery

Reports to: Store Director/ Assistant Store Director

POSITION SUMMARY: Oversees the preparation of all bakery products in the Bakery Department.Ensures all aspects of the Bakery operations and SOP’s are followed while striving to achieve cost-efficiency for the company.

ESSENTIAL FUNCTIONS (responsibilities include, but are not limited to):

- Greets customers when within ten feet and four seconds of contact.

- Responsible for inventory, expenses, gross profits, minimizing shrink

- Developing and training all associates who work in the Bakery Department and takes appropriate loss prevention measures

- Conducts floor checks to ensure the shelves are adequately stocked, the quality of the products are up to the Company’s standards, products merchandised, properly rotated, price integrity is being enforced according to Company standards

- Ensures all rules and regulations of various government and regulatory agencies are being enforced and also all associates are abiding by all Company policies and procedures

- Ensures good communication is maintained between associates, store management, the retail support staff and suppliers/vendors

- Observe color of products being baked and adjust oven temperatures, humidity, or conveyor speeds accordingly.

- Set oven temperatures and place items into hot ovens for baking.

- Combine measured ingredients in bowls of mixing, blending, or cooking machinery

- Measure or weigh flour or other ingredients to prepare batters, doughs, fillings, or icings, using scales or graduated containers.

- Place dough in pans, molds or on sheets and bake in production ovens.

- Adapt the quantity of ingredients to match the amount of items to be baked.

- Apply glazes, icings or other toppings to baked goods, using spatulas or brushes.

- Check equipment to ensure that it meets health and safety regulations and perform maintenance or cleaning, as necessary.

- Set time and speed controls for mixing machines, blending machines or steam kettles so that ingredients will be mixed or cooked according to instructions.

- Maintains knowledge of various products in the bakery department

- Assists in all aspects of the Bakery operation.

- Fosters a harmonious positive work environment and provides a safe and sanitary environment for customers and associates.

OTHER DUTIES / RESPONSIBILITIES :

- Use of proper safety procedures

- Occasional receiving of merchandise with or without the DSD (direct store delivery) gun.

- Periodic taking of, downloading and auditing inventories.

- Any tasks as deemed necessary by management

EXPERIENCE / EDUCATION :

- High school / Secondary school diploma or GED

- Must be at least 18 years of age to operate machinery

- Possesses a food handling license

SKILLS AND ABILITIES :

- Previous experience working with the public

- Proper baking skills and proper sanitation knowledge

- Ability to read and understand recipes and measuring quantities.

- Highly proficient in Bakery department products preparation and uses

WORK ENVIRONMENT:

- Air condition while in store, subject to heat when baking and chill temperatures if products need to be retrieved from chill or freezer

- Very fast paced
