Job summary:Cook and prepare food according to planned menus, maintain clean and sanitary conditions in the kitchen and dining areas and responsible for all dessert preparation.Essential functions of the job:• Use portion-control procedures; sanitize work areas, equipment, floors, dishes and utensils; check trays for menu and diet preferences and accuracy; ensure proper storage of foods and supplies; adhere to universal sanitation precautions, and infection-control policies and procedures.• Prepare meals and snacks, in according with written instructions (menus) and verbal clarifications.• Assure all dietary procedures are followed in accordance with established policies.• Establish food service production line and assure meals are prepared on time.Skills and aptitude required:• Must possess and exhibit a positive attitude toward customer service, have a genuine interest in geriatric care, and uphold the philosophy of the community.• Understand, comply with and promote rules regarding residents’ rights.• Promote positive relationships with residents, visitors, and regulators, to include presenting a professional appearance and attitude.• Possess a comprehensive knowledge of safe and sanitary food handling techniques.• Ensure that food and supplies are available for meals.• Report hazardous conditions and equipment, accidents and incidents.• Review menus prior to preparation of desserts.• Basic understanding of how to read a recipe• Basic understanding of mixing methods, creaming, whipping, folding• Basic understanding of measurements, cups & teaspoon & metric• Inclusive knowledge of most common desserts and their execution but not limited to, German Choc., Eclairs, Black Forest, Napoleon, and/or Crème Brule, FlanPhysical requirements:• Must be able to stand and walk short distances for long periods of time.• Requires bending, twisting from side to side at the waist, reaching above, below and at shoulder height, pushing and pulling.• Ability to distinguish smells and temperatures.• Must be able to lift and carry a minimum of 35 pounds.• Must be able to concentrate and multi-task in a noisy environment with interruptions and distractions.• Must meet all local health regulations, and pass post-employment physical exam, if required.• Must be able to withstand swings in temperatures from hot to very cold.• Must be able to stand on tile floors for an extended period of time.Education and experience required:• Minimum of 5 years’ baking and pastry experience in a professional bake shop or must be attending or graduate of a culinary arts school; culinary degree preferred• Must be able to read and write English and to follow written and verbal directions at a level necessary to accomplish the job.
