Overview

The Assistant Food & Beverage Manager oversees all aspects of the F&B operations and its services. This includes the setup of each meal period, service of outlets, creation of concepts, and ongoing innovation of the department with a focus on detail, quality, and customer service. The Assistant Food & Beverage Manager is also responsible for supervising restaurant staff and will report to the Food and Beverage Manager.

Responsibilities

• Achieve budgeted food sales, beverage sales, and labor costs
• Oversee annual/quarterly inventory projects and ensure budget requests are submitted on time
• Complete/supervise payroll & tips in an accurate and timely fashion
• Schedule staff to ensure adequate and consistent levels of service
• Inspect table settings, table linen, china, glassware, silverware, and condiments for correct placement; ensure cleanliness and attractive presentation
• Maintain hotel bar control policies in accordance with state laws
• Follow proper purchasing and requisition procedures
• Maintain records for equipment inventory, monthly stock inventory, labor cost, and food cost
• Develop and maintain all department control procedures
• Develop and maintain department training manual
• Liaise with the Restaurant Manager to meet client needs and requirements on an ongoing basis
• Be on the floor touching tables during services
• Provide quick service for last-minute changes
• Coordinate general housekeeping of the restaurant, public areas, kitchen, storage areas, entrances, etc.
• Manage staff training and development
