Job summary

St. Johns Golf and Country Club in St. Augustine, FL, is seeking a full-time Assistant Director of Food and Beverage to oversee restaurant and banquet operations, guest service, and menu execution.

You will work with the kitchen, manage staffing, scheduling, and cost controls, and help implement Troon standards across the department. The ideal candidate has an AA degree, food safety and sanitation training, and at least five years in restaurant FOH; strong leadership, English fluency, and

• Associate’s degree or equivalent experience.
• Food Safety and sanitation training completed.
• Alcohol awareness training completed.
• 5+ years of front-of-house restaurant experience.

Responsibilities

• Direct and oversee all FOH operations including guest satisfaction and service standards.
• Set schedules for restaurant, banquet, and beverage departments and manage staffing.
• Oversee beverage purchasing, pricing, and inventory controls.
• Coordinate with kitchen for timely service and food quality.
• Assist in budgeting, cost analysis, and marketing of restaurant and catering.
• Interview, hire, train, and supervise staff; address performance and discipline.
• Ensure compliance with Troon standards and safety policies.

Description

St. Johns Golf and Country Club, located in St. Augustine, FL, is pleased to announce an excellent career opportunity for a full-time Assistant Director of Food and Beverage! We are seeking a driven individual who is eager to learn, contribute, and grow within a fast-paced hospitality-focused property organization. As part of Troon, you will contribute to a global leader in golf and community management.

General Purpose:

Assists in directing and overseeing all food and beverage facets, including, but not limited to guest satisfaction and customer service, personnel, menu mix, ordering, vendor preference, food production, inventory, and catering functions.

• Sets and implements schedules for the restaurant, banquet, and beverage cart departments.
• Manages and assists in ordering all alcoholic beverages, maintains liquor pour costs, implements recipes, and sets retail pricing for products.
• Works closely with the kitchen to ensure expedient ticket times, excellent food quality, and proper plate presentation.
• Assists in the completion of all month-end inventories, including the kitchen, bars, and beverage cart.
• Assists the Director, Food and Beverage, with budget development and cost analysis.
• Assists in the marketing of the restaurant and catering departments, both internal and external.
• Assists in managing the floor of all banquet events.
• Manages table service standards for both banquets and the restaurant.
• Promotes and implements all Troon Golf standards, procedures, and policies.
• Responsible for interviewing, hiring, training, planning, assigning, and directing work, evaluating performance, rewarding, and disciplining associates; addressing complaints and resolving problems.
• Manages department members that may include, but are not limited to: Restaurant Manager, Catering Manager, Executive Chef, Host, Set Up Staff, Cooks, Servers.
• Assures that effective orientation and training are given to each new associate. Develops ongoing training programs and tests for comprehension.
• Monitors business volume forecast and plans accordingly in areas of manpower, productivity, costs, and other expenses.
• Incorporates safe work practices in job performance.
• Regular and reliable attendance.
• Performs other duties as required.

Education/Experience:

• Associate’s degree (AA); or six months to one-year related experience and/or training; or equivalent combination of education and experience.
• Food Safety and Applicable Sanitation Training, Alcohol Awareness Training
• 5+ years of restaurant FOH experience.

Other qualifications:

• Ability to read and speak English may be required in order to perform the duties of the job.
• Knowledge of Microsoft Office applications and POS systems.
