Position Summary
Overall management and facilitation of dining and beverage services to include; dining rooms, turn grille operation, beverage cart, pool snack bar, banquet execution.
Essential Functions
- Develops schedules for all food and beverage departments , according to budget and forecast
- Manages and assists in the ordering of all alcohol beverages, maintains beverage pour cost, implements recipes, retail pricing of product and responsibility of all beverage inventory control
- Works closely with the kitchen leadership to ensure food quality and consistency, and appropriate ticket time s, labor and cost of sales
- Assists in the completion of all month end inventories to include the kitchen, bars, and beverage cart
- Assists the Director, Food and Beverage with budget development and cost analysis
- Assists in the marketing and communication of F&B Department, both internal and external
- Assists in the managing other managers, front line associates, in all food and beverage outlets
- Manages service standards for all food and beverage outlets
- Promotes and implements food and beverage standards, procedures, and policies
- Assists and leads interviewing, hiring, training, planning, assigning, and directing work, evaluating performance, communicates opportunities, praise, progressive performance documentations of all front of house associates
- Addresses Food and Beverage service recovery, complaints and resolving issues
- Manages department members that may include, but is not limited to: Restaurant Manager, Host, Set Up Staff, Cooks, Servers , Bussers, Food Runners, and any other food and beverage associates
- Assures that effective orientation and training are given to each new associate. Develops ongoing training programs and tests for comprehension
- Monitors business volume forecast and plans accordingly in areas of labor , productivity, costs and other expenses
- Incorporates safe work practices in job performance
- Personalized member service
- Completion of payroll, tips, and banquet event service charge for all Front of House and Turn Grille staff
- Direct responsibility for organization of all banquet storage, linen closet and all other closets including electrical room and paper supplies area
- Audit of member checks to ensure accuracy at the end of each shift
- Closing duties and managers’ checklist
- Assist with inventory of china, glass, silver, and banquet equipment
- Assist with execution of all banquet and catering functions
- Answering of phones & assisting with member greeting when concierge is not on duty.
- Regular and reliable attendance
- Other duties as assigned
Knowledge, Skills, And Abilities
- Service heart.
- Ability to read and speak English.
- Exceptional organizational skills.
- Intermediate to advanced computer knowledge.
- Strong communication skills.
- Understanding of new food, liquor, beer, and wine trends.
- Ability to communicate with tact and diplomacy when working with members and staff.
- Ability to work under pressure with tight time constraints, as well as the ability to deal with frequent interruptions, unresolved situations, frequent change, delays, or unexpected events.
- Ability to keep sensitive information highly confidential.
Supervisory Responsibilities
- Hosts, Servers and Server Assistants
Required Education And Experience
- High school diploma or equivalent and field related education or a minimum of two years of restaurant, private club, hotel and banquet experience.
Preferred Education And Experience
- TABC Certified, Serve Safe Certified desirable
