Reports to: Executive Chef/Sous Chefs; position is non-exempt

Job Summary:

The AM Prep Cook is responsible for preparing ingredients and components needed for daily meal service. Working primarily during the morning hours, the prep cook ensures that the kitchen is set up and ready for lunch or dinner service. This position requires attention to detail, efficiency, and the ability to follow recipes and safety protocols.

Key Responsibilities:

Prepare and portion ingredients (e.g., chopping vegetables, marinating proteins, making sauces, etc.) according to recipes and standards.

Set up and stock stations with all necessary supplies.

Label and date all prepped items and store them correctly.

Maintain cleanliness and organization of the prep area, refrigerators, and storage spaces.

Assist in receiving and properly storing deliveries.

Follow food safety and sanitation standards at all times (e.g., HACCP guidelines).

Communicate clearly with kitchen staff and alert supervisors to low stock or any quality concerns.

Support the line cooks and chefs with additional prep tasks as needed.

Qualifications:

High school diploma or GED preferred.

Previous kitchen or prep experience is a plus.

Knowledge of basic cooking techniques and kitchen equipment.

Ability to follow instructions and multitask in a fast-paced environment.

Must be able to lift up to 50 lbs and stand for extended periods.

Food Handler’s Certification (or willingness to obtain one).
