AM Line Cook at The Joinery Hotel Pittsburgh, Pennsylvania

The Joinery hotel, a Curio Collection by Hilton located in Downtown Pittsburgh, is hiring an AM Line Cook.

Joinery Hotel Pittsburgh is a welcoming, 185-room boutique hotel and local gathering place in Downtown Pittsburgh’s Golden Triangle. It represents the legacy, local pride, and grit of the Burgh. Job Overview

To ensure proper service from the front line through quality control, training of line cooks, and ensuring proper sanitation levels.

Responsibilities

  1. Check all items against the recipe cards, verify that use records are followed for all items served, and ensure food is presented efficiently and in a quality manner.
  2. Monitor the line setup prior to all meal functions to ensure maximum efficiency during meal periods.
  3. Monitor the equipment maintenance and kitchen 'clean as you go' policy to ensure strict adherence.
  4. Prepare food of consistent quality following recipe cards and production and portion standards.
  5. Start food items that are prepared ahead of time, ensuring not to prepare more than estimated needs.
  6. Date all food containers and rotate as per the SOP, ensuring perishables are kept at proper temperatures.
  7. Check pars for shift use, determine necessary preparation, freezer pull, and line setup.
  8. Note any out-of-stock items or possible shortages.
  9. Return all food items not used on the next shift to designated storage areas, covering and dating all perishables.
  10. Assist in setting up plans and actions to correct any food cost problems; control food waste, loss, and usage per SOP.

Qualifications

Education/Formal Training

High school education or equivalent.

Experience

Experience required is one to two full years of employment in a related position.

Knowledge/Skills

  • Knowledge of cooking and kitchen practices and procedures.

Physical Demands

The physical demands described here are representative of those that must be met by an associate to successfully perform the essential functions of this job.

  • Lifting, pushing, pulling, and carrying: Position regularly involves lifting food cases and equipment weighing up to 70 lbs.
  • Periodic climbing required.
  • Bending of the knees is necessary when using the lower oven for cooking.
  • Mobility: Full range of mobility and ability to travel 30-50 feet on a regular basis.
  • Continuous standing during preparation and service hours.
  • Must be able to hear equipment timers and communicate with other staff.
  • Must be able to see that product is prepared appropriately.
  • Must understand and follow verbal/written instructions and communicate both verbally and in writing.
