Flying Food Group in Hawaii seeks a Food Production Supervisor to coordinate and oversee food processing operations, ensuring HACCP compliance, sanitation standards, and accurate recipe execution. You will lead a team, monitor performance, and train staff while managing schedules and minimizing waste.

Responsibilities include directing daily production, ensuring on-time delivery of meals, controlling costs, and maintaining safety and quality across hot and cold lines.

Responsibilities

• Ensure recipes are followed and portion control is accurate.
• Meet daily food ready times and minimize waste.
• Train staff in production processes and measurement systems.
• Attend to employee relations issues promptly and professionally.
• Control food costs and maintain proper waste reporting.
• Manage production rotations and FIFO for bulk foods.
• Review shift results and ensure HACCP documentation is complete.
• Communicate shift changes and manage overtime to meet needs.

Food Production Supervisors coordinate food processing and complete duties such as adhering to sanitation standards, setting schedules, monitoring employee performance, overseeing manufacturing processes, solving technical issues, and training workers.

Essential Functions

• Provide direction, guidance and supervision to employees to enable them to work more effectively
• Knowledge of Hot Food production processes
• Improve production process to increase productivity and process controls
• Ensure “food ready time” is met daily for Cold Food packing
• Ensure all cooks accurately follow recipes and meals are produced to specification; ask questions
• Ensure no shortages occur and portions control is accurately managed
• Train employee in production processes and measurements
• Proactively attend to employee relations issues to resolve them effectively and promptly
• Ensure controls are in place to manage food costs and report waste
• Manage rotation of hot meals produced and minimize waste
• Manage rotation of bulk food production to FIFO
• Hold regular F2F communication meeting with employees to review production results
• Hold regular F2F communication meeting with employees to review safety & hygiene
• Communicate shift schedule changes to employees
• Manage production schedules and processes to minimize overtime
• Manage work force accountability and ensure employees have tools needed for production
• Prepare purchasing orders daily for purchasing dept. to meet production requirements
• Prepare daily production orders for storeroom to ensure product is pulled and thawed on time for production
• Ensure that HACCP standards are achieved, and control documents are completed
• Verify all production sheets at the end of each shift to ensure all items were produced

Skills and Qualifications

• Knowledge of internal policies and procedures
• Knowledge of HACCP requirements, GMP and sanitation requirements.
• Competent to work independently, ask questions and seek direction as needed.
