SIHAMCO is seeking a skilled Chef de Partie - Grill in Istanbul to lead Mediterranean grill dishes on a fast-paced kitchen line. You will supervise grill station output, marinate meats, and maintain quality while training junior staff. The role is full-time and on-site, with a focus on safety, efficiency, and consistent presentation.

Qualifications

• 4+ years as Grill CDP or Demi CDP in a professional kitchen.
• Strong knowledge of Mediterranean ingredients and marination techniques.
• Proficient at cooking meats to various doneness levels.
• Experience with traditional grills and rotisserie.
• Ability to work efficiently under pressure with HACCP understanding.

Responsibilities

• Prepare and cook Mediterranean grilled items on the station.
• Marinate meats and seafood using authentic spice blends.
• Operate charcoal, gas, or wood-fired grills safely and efficiently.
• Maintain grill station cleanliness and organization at all times.
• Train commis chefs and junior staff as required.
• Monitor stock, prep levels, and waste for the grill section.
• Uphold food safety, hygiene, and sanitation standards.

Key Responsibilities

• Prepare and cook Mediterranean grilled items
• Marinate meats and seafood using authentic spice blends and recipes
• Operate and maintain charcoal, gas, or wood-fired grills according to safety and cooking standards
• Ensure all food preparation and presentation meet quality and consistency standards
• Work closely with the kitchen brigade to ensure smooth service during peak hours
• Maintain cleanliness and organization of the grill station at all times
• Monitor and manage food stock, prep levels, and waste control for the grill section
• Assist in training commis chefs and junior staff as required
• Uphold food safety, hygiene, and sanitation standards at all times

Requirements

• 4 + years of experience as a Grill CDP or Demi CDP in a professional kitchen, with a focus on Mediterranean cuisine
• Strong understanding of Mediterranean ingredients, spices, and marination techniques
• Proficient in cooking meats to different doneness levels while retaining moisture and flavor
• Experience using traditional equipment such as charcoal grill, or rotisserie
• Ability to work efficiently under pressure in a fast-paced environment
• Knowledge of food safety standards (e.g., HACCP)
