Job description

A Vietnamese cuisine bistro is currently looking for a competent and responsible Vietnamese Cuisine Trainer to be part of a new journey of venturing into the F&B/hospitality industry.

The Trainer shall be a confident, effective, and efficient educator who is able to coach, motivate and work collaboratively with kitchen staff and trainees. He/She will be responsible for delivering hands-on culinary training, ensuring trainees meet food preparation standards, and instilling knowledge of cost control, food safety, and kitchen operations.

He/She shall also be expected to:

  • Develop and document training modules and standard operating procedures (SOPs) for Vietnamese cuisine.
  • Conduct practical cooking sessions, food preparation demonstrations, and skill assessments.
  • Provide continuous guidance on quality control, inventory management, and purchasing best practices.
  • Mentor kitchen staff to develop both technical and leadership skills for the hospitality industry.

Requirements:

  • Minimum 2 years of experience with a proven track record as a Vietnamese chef or culinary instructor in a competitive and fast-paced environment.
  • Specialized in Vietnamese cuisine, including traditional dishes and modern interpretations.
  • Demonstrate advanced dry heat cooking techniques, seasoning techniques, knife skills, food presentation, sous vide, and a superior palate.
  • Knowledge of different meat cuts, seafood preparation, fabrication, and utilization in culinary applications.
  • Ability to teach food preparation processes to maintain high standards and consistency.
  • Apply food safety management systems and conduct hygiene audits for food service establishments.
  • Maintain and promote workplace safety, health policies, and best practices within a training environment.
