Job summary

JOB ASIA CONSULTANCY PTE. LTD. in Singapore is seeking an experienced Sous Chef to lead a South Indian kitchen. You will supervise line cooks, prep cooks, and staff, and step in on the line during rushes to maintain quality and standards.

You will train the team, enforce recipes and plating specs, manage prep and inventory, and assist with menu development and costing while upholding HACCP and health codes. A 5-year sous-chef background and a hotel management degree are required.

Qualifications

• 5 years' experience as a sous chef required.
• Bachelor's degree in hotel management required.
• Knowledge of Indian spices and South Indian cuisine preferred.

Responsibilities

• Supervise line cooks, prep cooks, and kitchen staff during service.
• Jump on the line to cook during rushes or when someone is out.
• Ensure each dish meets head chef's standards before leaving the pass.
• Train new cooks and enforce recipes, techniques, and plating specs.
• Oversee prep, mise en place, inventory, and help with menu costing.
