A Sous Chef at Osteria Mozza will work closely with the Executive Chef to manage all aspects of the kitchen, ensuring an excellent guest and member experience. Responsibilities include managing food provisions, assisting with guest queries, and controlling costs.

What will I be doing?

As the Sous Chef, you will be responsible for:

  • Planning, preparing, and implementing high-quality food and beverage products and setups.
  • Following recipes, standards, and plating guides.
  • Maintaining HACCP standards within hotel operations.
  • Using equipment, tools, and machines appropriately.
  • Improving training manuals and SOPs.
  • Participating in quality initiatives and team meetings.
  • Working on offsite events as needed.
  • Completing tasks outside the kitchen when required.
  • Assisting in inventory management.
  • Understanding hotel occupancy, events, and forecasts.
  • Preparing menus promptly.
  • Developing new dishes for tastings and photoshoots.
  • Controlling kitchen stations.
  • Collaborating with Stewarding for cleanliness and safety.
  • Responding effectively to guest requests.
  • Adapting to changes and accepting feedback.
  • Managing purchasing and controlling food wastage.
  • Maintaining professionalism and team spirit.
  • Adhering to hotel rules and guidelines.
  • Coordinating production and ensuring standards are met.
  • Checking and maintaining equipment and recipes.
  • Training team members to be certified and competent.
  • Monitoring food preparation and costs.
  • Ensuring accurate timesheets and promoting teamwork.
  • Performing other duties as assigned.
What are we looking for?

The ideal candidate will:

  • Possess at least a high school diploma or equivalent.
  • Have 5 years of experience in a 5-star hotel or high-standard restaurant.
  • Hold a valid food hygiene certificate.
  • Be skilled in various cooking techniques and food preparation.
  • Be creative, experienced in menu design and food promotions.
  • Lead by example, motivate, and coach the team.
  • Be proficient in Microsoft Word and Excel.
  • Be able to prioritize and work under pressure.
  • Possess excellent leadership skills and knowledge of HACCP.
  • Have technical education in hospitality or culinary arts (preferred).
  • Have good command of English (preferred).
  • Experience in international chain hotels is a plus.
