About the role

Milligram is seeking an experienced Sous Chef to join our talented culinary team in our iconic restaurant located in the heart of the Downtown @ Marina One. As Sous Chef, you will play a vital role in supporting the Head Chef in overseeing all kitchen operations and ensuring the highest standards of food quality and presentation. This is a full-time position with opportunities for growth and development within our respected hospitality group.

What you'll be doing

  • Assist the Head Chef in the daily management and organisation of the kitchen, including mise en place, food preparation, and workflow

  • Lead the kitchen team in the Head Chef's absence, ensuring seamless service and exceptional dish execution

  • Collaborate with the Head Chef to develop and refine the menu, incorporating seasonal and innovative ingredients

  • Maintain strict quality control and food safety standards, monitoring inventory and costs

  • Train, mentor and supervise the kitchen brigade, fostering a positive and productive work environment

  • Contribute to the continuous improvement of kitchen operations and procedures

What we're looking for

  • Minimum 2 years' experience as a Sous Chef or in a similar senior culinary role within a high-volume, fine dining establishment

  • Strong working knowledge of food safety, kitchen operations and inventory management

  • Excellent communication, leadership and teamwork skills to effectively manage a diverse kitchen team

  • Passion for creating innovative, visually appealing dishes using seasonal, locally sourced ingredients

  • A commitment to maintaining the highest standards of food quality and presentation

  • Relevant culinary qualifications (e.g. diploma, degree or apprenticeship) and certifications
