About the role
Milligram is seeking an experienced Sous Chef to join our talented culinary team in our iconic restaurant located in the heart of the Downtown @ Marina One. As Sous Chef, you will play a vital role in supporting the Head Chef in overseeing all kitchen operations and ensuring the highest standards of food quality and presentation. This is a full-time position with opportunities for growth and development within our respected hospitality group.
What you'll be doing
Assist the Head Chef in the daily management and organisation of the kitchen, including mise en place, food preparation, and workflow
Lead the kitchen team in the Head Chef's absence, ensuring seamless service and exceptional dish execution
Collaborate with the Head Chef to develop and refine the menu, incorporating seasonal and innovative ingredients
Maintain strict quality control and food safety standards, monitoring inventory and costs
Train, mentor and supervise the kitchen brigade, fostering a positive and productive work environment
Contribute to the continuous improvement of kitchen operations and procedures
What we're looking for
Minimum 2 years' experience as a Sous Chef or in a similar senior culinary role within a high-volume, fine dining establishment
Strong working knowledge of food safety, kitchen operations and inventory management
Excellent communication, leadership and teamwork skills to effectively manage a diverse kitchen team
Passion for creating innovative, visually appealing dishes using seasonal, locally sourced ingredients
A commitment to maintaining the highest standards of food quality and presentation
Relevant culinary qualifications (e.g. diploma, degree or apprenticeship) and certifications
