Job Overview:

Dona Manis Cake Shop, known for its artisanal pastries and signature banana pies, is seeking a dedicated Pastry Chef cum Production Supervisor to lead our kitchen team. The role requires balancing hands-on pastry creation with day-to-day management of production operations, ensuring that every product upholds our traditional quality and reputation.

Key Responsibilities

Pastry Chef Duties:

  • Prepare and oversee the baking of signature products such as banana pies, cream puffs, and traditional cakes.
  • Maintain consistent product quality, taste, and presentation according to Dona Manis’ standards.
  • Innovate and develop new pastries in line with the brand's traditional yet evolving identity.
  • Ensure kitchen hygiene, cleanliness, and food safety standards are strictly followed.
  • Train and mentor junior bakers and kitchen assistants.

Production Supervisor Duties:

  • Plan and manage daily production schedules to meet sales demands.
  • Monitor and manage inventory of ingredients, packaging materials, and kitchen supplies.
  • Implement production efficiencies while minimizing wastage.
  • Supervise production staff: manage work schedules, assign duties, and oversee performance.
  • Coordinate with suppliers for timely ordering and delivery of raw materials.
  • Ensure the upkeep and maintenance of all baking equipment.

Requirements:

  • Proven experience as a Pastry Chef, Baker, or similar role, preferably in a traditional bakery setting.
  • Prior experience managing a small to mid-sized kitchen team.
  • Strong understanding of traditional baking techniques.
  • Knowledge of food hygiene and safety standards (e.g., SFA regulations).
  • Excellent organizational, leadership, and communication skills.
  • High attention to detail and commitment to quality.

Preferred Qualifications:

  • Diploma or Certification in Baking & Pastry Arts, Culinary Arts, or related field.
  • 3-5 years of hands-on baking experience.
  • Experience working in a high-demand bakery environment.
  • For Production Supervisors, a good grasp of bakery production and staff management skills will be required.
