To cook and prepare food, assisting the head chef with their daily tasks. Ensure food preparation, presentation
and service is carried out in a timely manner and in accordance with the event order in accordance with client
needs and to Sodexo standards. Maintain efficiency of the kitchen operation delivery a high standard of food
quality and service in relation to food safety.

Responsibilities
• Prepare and serve high-quality food items according to the menu and Sodexo Remote Sites guidelines.
• Prepare food products as instructed by the Head Chef.
• Present visually appealing & tasty food.
• Manage kitchen organization, ensuring that all components for cooking are set out in an orderly and easily
accessible manner.
• Maintain a positive working relationship with the client and customers.
• Perform the cooking process of menu items, ensuring that all food is cooked to Food Platform
specifications and with fresh, high-quality ingredients.
• Follow recipes, portion controls and other production requirements as set out by the menu plan.
• Operate kitchen cooking appliances and equipment, such as grills, stoves and ovens.
• Maintain documentation on all Food Safety processes, including temperature monitoring and stock rotation
records.
• Follow Sodexo menus and portion controls when producing and serving food items.
• Prevent the spoiling and waste of food, and abide by Sodexo’s Food Safety procedures.
• Maintain cleaning and sanitization in the kitchen area.
• Maintain and update incident reporting records, including Critical Control Point (CCP) reports, unfit food
reports and alleged food poisoning reports.
• Assist the Head Chef in conducting regular stock takes prior to the placement of food orders.
• Perform correct manual handling techniques within the kitchen and dining areas.
• Dispose of waste in line with Sodexo recycling and waste disposal procedures.
• Foster and maintain a strong rapport with staff and managers at all levels.
• Report food hazards and faulty equipment to the Head Chef.
• Assist in the promotion of healthy eating programs and other Sodexo-approved promotions.
• Attend pre-start meetings, safety meetings and other meetings and training sessions as required.
• Stop any work or process with the potential to cause harm to employees or patrons. Report any incidents,
near hits, procedure deficiencies and poor working conditions to the immediate manager and HSEQ
personnel.
• Contribute to the creation of a positive dining experience by ensuring that all customers are satisfied with
the quality and variety of food provided.
• Ensure that food products are prepared and delivered to patrons at a high standard of quality and
presentation.
• Maintain a strong dedication towards safety and improving work processes in the Kitchen and Dining
Room.
• Ensure that all required reporting is kept up-to-date and accurate, including CCP reports, temperature
monitoring and incident reports.
• Ensure that the correct Safety Data Sheets (SDSs) are adhered to when using cleaning materials and
chemicals.
• Ensure that the appropriate PPE is worn at all times when carrying out duties.
• Identify and report any environmental or OHS hazards and incidents to the immediate manager and HSEQ
personnel in a timely manner, and assist in the development and implementation of initiatives to avoid
environmental and safety risks.
• Other reasonable duties as directed.
Education
• Certificate III in Commercial Cookery SIT30813.
Certification
• Food Safety Certificate.
Experience
• Demonstrated experience in the catering industry.
• Experience in offshore catering is desirable.
Knowledge & Skills
• Ability to stand on feet for extended periods of time.
• Understanding of Food Safety, OHS and applicable legislation.
• Intermediate knife skills.
• Organized and self motivated
