About us

Esquina is seeking a Junior Sous and Sous Chef to join our big family. With an emphasis on a lively, modern and casual vibe that focuses on Spanish cuisine.

Job Description

Staffing

  1. Training and supervision of all staff under them
  2. Be a role model to all staff to ensure good habits and behavior
  3. Guide and motivate staff to work efficiently and correctly
  4. All recipes are recorded correctly and accessible for staff
  5. Ensure all staff are dressed and groomed appropriately
  6. Ensure training is implemented and completed
  7. Supervise staff meal to ensure it is delicious and nutritional

Operations

  1. Assist management of the kitchen in absence of the Head Chef
  2. Implementation of menu items with menu changes as per schedule
  3. Follow and maintain allotted food cost
  4. Ensure ordering and storage of goods is correct and on time
  5. Ensure stock levels are within guidelines
  6. Minimize food wastage
  7. Ensure recipes and procedures are followed correctly
  8. Supervise jr cooks with MEP and SOPs

Hygiene and Safety

  1. Ensure all hygiene standards are met and staff are trained to adhere to these requirements
  2. Maintain cleanliness and organization in all work areas
  3. Ensure compliance with all applicable laws and regulations
  4. Attend all scheduled employee meetings and bring suggestions for improvement
  5. Report all equipment problems and maintenance issues, known safety hazards, or unsafe practices and procedures to supervisor immediately

Job Requirement

  • Minimum with graduated from Nitec/ Higher Nitec in Culinary Art or Diploma in certified in Culinary School or Equivalent.
  • 3 to 5 years of experience as Chef De Partie or Junior Sous in a Semi Fine-Dining Restaurant
  • Excellent use of various cooking methods, ingredients, equipment and processes.
  • Excellent listening and communication skills.
  • Ability to work independently and work well in a team.
  • Knowledge of best practices for safety and sanitation.
