Job summary

BMG Hospitality is seeking a hands-on Head Chef to lead our Western restaurant in Chinatown, Singapore. You will drive kitchen operations, ensure food quality and cost controls, and mentor a capable culinary team.

Additionally, you will support breakfast production for capsule hotels, participate in hotel and event planning, and help scale a central kitchen system using AI and cloud tools as the business grows.

Qualifications

• Experience as Head Chef or senior leadership in kitchen operations.
• Strong Western cuisine knowledge and high-volume production capability.
• Ability to train and develop kitchen staff.
• Cost control, portioning and inventory management expertise.
• Comfort with AI-enabled, cloud-based kitchen systems.

Responsibilities

• Lead day-to-day kitchen operations.
• Ensure food quality, consistency, presentation and production.
• Train and develop kitchen staff.
• Oversee breakfast production for capsule hotel guests.
• Collaborate with Restaurant Manager and operations teams on events.
• Develop, standardise menus and recipes; monitor cost and wastage.
• Forecast ingredients and manage stock levels.
• Maintain food safety, hygiene and compliance.
