About Us:
Curlys Central Kitchen is the beating heart of the Ebb & Flow Group, supporting multiple restaurant concepts with high-quality food production and seamless logistics. Located in Tampines, our facility comprises hot kitchens, pastry and bakery units, raw protein preparation, and fresh produce processing. We're seeking a passionate and experienced Head Chef (Bakery) to lead our bakery and pastry team, driving innovation, efficiency, and excellence across all baked products supplied to our growing group of brands.

Key Responsibilities:

  • Lead & Innovate: Oversee daily operations of the bakery and pastry section, ensuring consistent production of high-quality baked goods, viennoiserie, and desserts across multiple restaurant brands.
  • Recipe & Menu Development: Lead research and development initiatives for new bakery items, seasonal offerings, and custom products tailored to the evolving needs of Ebb & Flow Group’s restaurant concepts.
  • Team Management: Train, mentor, and supervise the bakery team, including junior bakers and commis, to foster a culture of excellence, accountability, and continuous learning.
  • Production Planning: Coordinate production schedules to meet delivery timelines for all outlets, ensuring freshness and minimizing waste.
  • Quality Assurance: Uphold and enforce strict food safety, hygiene, and quality control standards in line with SFA and internal policies.
  • Inventory & Cost Control: Manage ingredient sourcing, inventory levels, and cost efficiency in collaboration with the procurement and operations teams.
  • Cross-functional Collaboration: Work closely with other kitchen section heads (hot kitchen, protein, green produce) to ensure smooth operations and logistics throughout the central kitchen.

Requirements:

  • Proven experience (minimum 5 years) in bakery and pastry production, with at least 2 years in a supervisory or head chef role.
  • Valid Food Hygiene Certificate (Level 2 or above preferred).
  • Strong leadership and organizational skills, with a hands-on, solutions-focused mindset.
  • Able to work in a fast-paced, high-volume production environment.
  • Passionate about baking with a drive to push culinary boundaries and elevate product offerings.
  • Familiar with scaling recipes and maintaining consistency across batch sizes.
