Main Responsibilities
- Report to the Brand Executive Chef
- Take charge of the kitchen, maintaining complete control at all times and commanding the respect of the kitchen staff
- Identify problems and resolve them quickly and efficiently
- Maximize the productivity of kitchen staff
- Lead, coach, and develop station chefs to enhance team performance
- Develop and implement innovative food ideas, concepts, and menu or recipe revisions to increase sales
- Conduct bi-monthly stock takes
- Coach the kitchen team on managing costs effectively while maintaining recipe standards and proper cooking and preparation procedures
- Perform routine inspections and evaluations of workstations, including food presentation, quality, hygiene, cleanliness, and safety
- Ensure all locations conform to product specifications, policies, and procedures for supplies, ingredients, and products sold
- Handle procurement for ordering supplies and update GRN
- Participate in checking the quality of all purchased supplies and verify each delivery
- Conduct orientation, training, and coaching for new trainees
- Manage disciplinary issues, conduct annual reviews, and staff confirmations
- Plan staff duty rosters and cleaning schedules
- Adhere to the company's standard operating procedures
- Perform any other duties and responsibilities as assigned
