Job summary

The Granary Bakehouse in Singapore is seeking a Head Baker to lead our team in crafting breads and viennoiseries for our bakery cafés and wholesale partners. Our central Mandai bakery focuses on delivering quality products from sourdough loaves to croissants.

You will oversee daily operations, mentor junior bakers, and ensure top-quality output while upholding hygiene and collaboration with sales to meet demand.

Qualifications

• Proven experience in artisan bread and viennoiserie production.
• Strong passion for baking and craftsmanship.
• Excellent communication and interpersonal skills to build a positive team culture.
• Attention to detail and problem-solving abilities to maintain quality.
• Able to manage production timelines and adapt to operational needs.

Responsibilities

• Lead bakery team to ensure smooth daily operations.
• Maintain high standards in production of sourdough breads, tin breads, croissants, cruffins, and other baked goods.
• Engage in Mixing, Shaping, Baking, and Lamination processes.
• Guide the production of preferments and curds with precision.
• Ensure proper packing, preparation, and presentation of finished products.
• Uphold cleanliness and hygiene standards across the bakery and equipment.
• Troubleshoot production challenges and implement process improvements.
• Collaborate with office and sales team to align output with demand.
• Mentor junior bakers and foster a culture of learning, teamwork, and good communication.
