Job description

We are seeking a highly skilled and innovative Head Baker & Pastry Chef to lead our bakery and pastry operations with a strong focus on Research & Development (R&D). The ideal candidate will be responsible for overseeing the production of bakery and pastry items while driving creativity and innovation through the development of new recipes, techniques, and seasonal offerings. This role combines hands-on production leadership with strategic R&D to keep our brand at the forefront of culinary trends.

Production & Team Leadership:
  • Lead, mentor, and inspire the bakery and pastry team to uphold excellence in technique, creativity, and execution.

  • Foster a culture of continuous improvement by guiding staff through hands-on training and skill development.

  • Align daily production with business goals, balancing creativity with operational efficiency.

Research & Development (R&D):

  • Spearhead the creation, testing, and refinement of innovative bakery and pastry products.

  • Stay updated on global and local food trends, ingredients, and techniques to drive menu evolution.

  • Develop seasonal collections, festive specials, and custom product lines aligned with brand identity.

  • Conduct ingredient trials and test baking for new product launches.

  • Document recipes, processes, and technical specifications to ensure scalability and consistency.

Quality Control & Standards:

  • Monitor quality standards for taste, texture, appearance, and presentation.

  • Maintain hygiene and food safety protocols in compliance with HACCP and local health regulations.

  • Ensure all bakery and pastry equipment is properly maintained and calibrated.

Inventory & Cost Management:

  • Oversee procurement of raw materials in collaboration with the purchasing team.

  • Control wastage, manage inventory levels, and ensure cost-effective operations.

Job Requirements:
  • Minimum of 5 years’ experience in baking, pastry arts, or a related field, with a strong emphasis on high-quality production and recipe development.

  • Demonstrated leadership capabilities, including experience in mentoring, training, and motivating bakery team members.

  • Solid understanding of quality assurance practices, food safety regulations, and production workflow optimization.

  • Innovative and creative approach to recipe creation, with a genuine passion for exploring new techniques and trends in bakery arts.

  • Strong communication, interpersonal, and organizational skills.
