Responsibilities for Food Production Manager
- Research, evaluate, and recommend investments in technology, equipment, systems, or other assets that will improve and enhance the department’s capabilities and improve the work-life balance for staff.
- Liaise with other Managers across Catering Services to ensure that Food Production is aligned and processes inbound and outbound flights efficiently.
- Direct Assistant Managers to control costs, maintain compliance, improve service, and develop staff.
- Contribute to continuous improvement plans within Food Production to align with the overall Catering Services vision and goals.
- Maintain high-level relationships with airline customers and deliver on promises.
- Contribute to business planning by introducing plans that mitigate risk, ensure service continuity, deliver high customer satisfaction, and increase profits.
- Ensure effective, efficient, and innovative processes are in place, based on previous in-flight catering experience, including best practices, optimized processes, equipment specification, organizational structure, job descriptions, and candidate selection.
- Monitor and evaluate customer service standards to reduce complaints and address recurring issues promptly and cost-effectively.
- Review Food Production processes regularly to achieve on-time and in-full performance.
Qualifications for Food Production Manager
- Degree in Hotel and Restaurant Management or equivalent preferred.
- In-depth understanding and working experience with HACCP, GMP, ISO standards, and Lean Six Sigma systems.
- Minimum of 7 years working as a Sous Chef in an in-flight catering unit handling 20,000+ meals per day, with at least 3 years in a Food Production Planning role.
- Technical knowledge of food production across different kitchens, including butchery, dishing, cold logistics, and supply chain management, with industry best practices from an ERP/SAP perspective.
- Management skills including budgeting, procurement, and supervision.
- Strong interpersonal skills and ability to work effectively across all levels in a diverse, multicultural environment.
- Outstanding track record in the in-flight catering and logistics sector.
