Job Responsibilities
- Assist with the preparation, cooking, and presentation of produce as a Chef de Partie, working closely with the Sous Chef and Head Chef.
- Manage a section with the assistance of Commis Chefs.
- Prepare and cook food to the restaurant's specific standards.
- Develop and supervise the Commis Chef on your section.
- Implement waste controls and manage section stock control and rotation.
- Maintain cleanliness by completing the kitchen cleaning schedule.
- Understand and follow the restaurant's administrative procedures, including docket procedures, station management, table numbering, and food labeling.
- Maintain detailed knowledge of the full menu.
- Work effectively as part of a team.
- Comply with legal requirements under the H&S Act 1974 and food hygiene standards.
- Adhere to all policies, procedures, standards, and training programs.
- Report maintenance issues promptly.
- Ensure all restaurant and menu standards are consistently met.
- Produce food to the highest standards and restaurant specifications.
- Minimize wastage and use stock items in the correct order.
- Be able to describe all dishes in detail.
- Complete all health and safety documentation, including cleaning schedules and temperature records.
- Support the Sous and Head Chef and colleagues effectively.
- Ensure the section runs smoothly and tasks are completed promptly.
- Provide regular training, coaching, and support to Commis Chefs.
Job Requirements
Education & Certification
- Diploma/Degree in Culinary Arts, Pastry, or a related field preferred.
Experience
- At least 5 years of experience in a full-fledged kitchen, with a minimum of 2 years in a similar role.
Competencies
- Food hygiene and safety certification.
- Ability to work rotating shifts, including weekends and public holidays.
- Professional appearance and grooming.
- Clear understanding of role responsibilities and ability to perform them accordingly.
- Effective team collaboration skills.
- Strong prioritization, time management, and resource management skills.
- Professional and concise communication skills, with active listening.
- Ability to see the bigger picture and seek guidance when needed.
