Job Responsibilities
  1. Assist with the preparation, cooking, and presentation of produce as a Chef de Partie, working closely with the Sous Chef and Head Chef.
  2. Manage a section with the assistance of Commis Chefs.
  3. Prepare and cook food to the restaurant's specific standards.
  4. Develop and supervise the Commis Chef on your section.
  5. Implement waste controls and manage section stock control and rotation.
  6. Maintain cleanliness by completing the kitchen cleaning schedule.
  7. Understand and follow the restaurant's administrative procedures, including docket procedures, station management, table numbering, and food labeling.
  8. Maintain detailed knowledge of the full menu.
  9. Work effectively as part of a team.
  10. Comply with legal requirements under the H&S Act 1974 and food hygiene standards.
  11. Adhere to all policies, procedures, standards, and training programs.
  12. Report maintenance issues promptly.
  13. Ensure all restaurant and menu standards are consistently met.
  14. Produce food to the highest standards and restaurant specifications.
  15. Minimize wastage and use stock items in the correct order.
  16. Be able to describe all dishes in detail.
  17. Complete all health and safety documentation, including cleaning schedules and temperature records.
  18. Support the Sous and Head Chef and colleagues effectively.
  19. Ensure the section runs smoothly and tasks are completed promptly.
  20. Provide regular training, coaching, and support to Commis Chefs.
Job Requirements

Education & Certification

  • Diploma/Degree in Culinary Arts, Pastry, or a related field preferred.

Experience

  • At least 5 years of experience in a full-fledged kitchen, with a minimum of 2 years in a similar role.

Competencies

  • Food hygiene and safety certification.
  • Ability to work rotating shifts, including weekends and public holidays.
  • Professional appearance and grooming.
  • Clear understanding of role responsibilities and ability to perform them accordingly.
