We are seeking an innovative and passionate EAM F&B / Director - Food & Beverage to head the F&B department at their bespoke luxury hotel in Chennai.
Job Summary:
The EAM F&B / Director F&B will manage and organize the activities of the Food & Beverage department, including restaurants, banquet operations, room service, and bars. The role involves coordination with F&B production to maintain high standards of food and beverage quality, service, and marketing to maximize profits through outstanding customer service.
Responsibilities:
- Plan and direct the administration and planning functions of the F&B department to meet daily operational needs.
- Assign and delegate responsibilities for various sub-departments such as restaurants, banquets, bars, room service, and kitchen stewarding.
- Monitor, develop, and implement schedules for all outlets to ensure profitability.
- Collaborate with chefs and restaurant managers on menu design and merchandising to attract target customers.
- Implement controls on food, beverage, and labor costs, and monitor budgets to ensure efficient operations and profitability.
- Assist department managers in achieving profit objectives and maintaining standards of quality, cleanliness, and merchandising.
- Review customer satisfaction levels and recommend operational or marketing changes as needed.
- Investigate and resolve food quality and service complaints.
- Develop management tools such as budgeting, forecasting, purchase specifications, recipes, and job descriptions.
- Ensure compliance with corporate policies, procedures, and government regulations.
- Hire, train, supervise, develop, discipline, and counsel F&B management team members.
Ideal Candidate:
- Bachelor's Degree in Hospitality Management.
- Minimum of 12-14 years of experience in food and beverage management with reputed hotel brands.
- Current role as Director F&B in a five-star hotel.
- Experience with destination weddings and events is desirable.
- Proven track record in managing F&B operations in a deluxe hotel environment.
- Strong understanding of menu design, cost control, and inventory management.
- Excellent leadership, communication, and team management skills.
- Ability to work under pressure and deliver results in a fast-paced environment.
- Familiarity with local F&B trends and best practices.
