We are seeking a Director of Food & Beverage (F&B) for Hotel Openings in the Asia Pacific region. The ideal candidate will have strong culinary and kitchen experience to oversee kitchen design and food quality during pre-opening and operational phases.
HOW YOU WILL MAKE AN IMPACT
Your role is vital and involves the following key responsibilities:
- Serve as a subject matter expert for F&B, restaurant, bar, and culinary disciplines within APAC.
- Provide strategic direction on new hotel openings, restaurant concepts, menus, food quality, and kitchen design.
- Participate in pre-opening training for all F&B outlets.
- Assist in creating menus, recipes, and conducting food testing.
- Train chefs and core kitchen staff on kitchen management practices.
- Lead initiatives to improve food quality in both new and existing hotels.
- Stay updated on culinary trends.
- Review and optimize kitchen and dining room designs and layouts.
- Offer expertise and support on F&B, restaurant, and bar concept development during new builds and renovations, reviewing spaces, facilities, and drawings throughout development phases.
- Maintain and communicate updated F&B SOPs, ensuring consistency with Hilton strategies.
- Collaborate with Architecture, Design & Construction (AD&C) teams to realize F&B concepts in new and renovated projects.
- Support hotels during pre-opening and opening phases, providing F&B expertise, training, and coordinating taskforces as needed.
- Perform additional duties as required to meet business needs.

Minimum qualifications include:
- At least 5 years of recent experience in F&B, restaurant, and bar management.
- Over 10 years of F&B experience, including leadership roles managing diverse teams.
- Strong culinary background.
- Understanding of multi-brand standards and pre-opening support processes.
- Deep knowledge of F&B, restaurant, and culinary management disciplines and procedures.
- Financial management skills, including P&L analysis, budgeting, CAPEX planning, and forecasting.
- Good understanding of related departments such as Meetings & Events and Culinary.
- Solid understanding of hotel operations, industry trends, challenges, competitors, and Hilton’s market position, with a focus on growth opportunities.
- Highly organized with excellent relationship management and training skills.
- Willingness to travel approximately 60% of the time.
Preferred qualifications include:
- Experience in luxury hospitality settings.
