A Chef de Partie prepares and cooks according to standard procedures, recipes, photographs, and instructions, assisting the Sous Chef in training team members. The role involves product development and ensuring the smooth operation of the kitchen.

What will I be doing?

As Chef de Partie, you will be responsible for performing the following tasks to the highest standards:

  1. Manage day-to-day operations of an area in the kitchen (Banquet, Cold Food, À la Carte, Hotline, Mercatino, Basilico, Dolchetto, Manhattan).
  2. Aid in buffet, special Muslim, Indian menus, and other banquet specials as required.
  3. Ensure sanitation standards as set by Hilton and local regulations are met, maintaining kitchen cleanliness and organization. HACCP compliance.
  4. Complete and ensure all work in assigned areas adheres to cleanliness standards and Hilton policies.
  5. Prepare and plate food according to Hilton guidelines and standards.
  6. Distribute work evenly among team members and supervise the preparation process.
  7. Maintain good relationships with colleagues, providing instructions and encouragement.
  8. Act as Senior Chef de Partie in their absence.
  9. Handle store requisitions and daily orders for your section.
  10. Ensure proper storage, labeling, food rotation, and FIFO practices.
  11. Operate kitchen equipment safely and maintain cleanliness after use.
  12. Prepare and present food timely, maintaining Hilton standards.
  13. Accommodate guest preferences and requests from servers.
  14. Follow standard recipes and presentation guidelines to ensure quality.
  15. Thoroughly clean work areas and equipment at shift end.
  16. Keep work areas organized and clean.
  17. Maintain professionalism and a positive attitude towards change.
  18. Report accidents immediately.
  19. Foster good morale and relationships among staff.
  20. Respond appropriately to hotel emergencies and safety situations.
  21. Collaborate with butchers, pastry kitchen, and stewarding teams for food and equipment needs.
  22. Create new dishes, salads, dressings, and food presentations for various menus and specials.
  23. Perform other tasks as assigned by management.

  • Proficiency in English (reading, writing, speaking).
  • 4-6 years of experience in hotels or similar settings.
  • Strong organizational, training, and planning skills.

  • Flexible scheduling and ability to manage stock efficiently.
  • Multiskilled with knowledge of various cuisines and techniques; knowledge of international cuisine is a plus.
