Responsibilities include but are not limited to:
- Maintaining kitchen hygiene, safe food storage, and rotation.
- Coordinating all aspects of the department’s operations to ensure service excellence and adherence to standards.
- Managing daily staff operations within the department.
- Aligning management practices with the hotel’s vision, values, and policies, including the Code of Conduct.
- Responding to guest and employee feedback to continually improve service quality.
- Monitoring kitchen equipment for safety and functionality, reporting faults as needed.
- Completing daily stores requisitions.
- Collaborating with other chefs to streamline operations.
- Supervising or preparing daily food service requirements.
- Conducting staff briefings, meetings, and performance appraisals, and identifying training needs.
- Coordinating service between front and back of house.
- Providing input on menu development and food trends.
- Training staff in food skills and knowledge.
- Recruiting, training, evaluating performance, and managing staff productivity and scheduling.
- Supervising kitchen steward tasks and ensuring adherence to safety and food standards.
- Implementing strategies to reduce absenteeism and manage occupational health and safety issues.
- Ensuring compliance with fire, evacuation, health, and safety procedures.
- Undertaking additional duties as assigned by hotel management.
- Following food safety protocols, exercising quality and portion control, and minimizing wastage.
